To throw my slow cooker under a big bUs

I was trying to make steak teriyaki, I marinated the steak for one hour in the teriyaki sauce and then put it in the slow cooker. It's totally tasteless and I have no idea what to do with it now. Can I just put more sauce on it? How do you cook meat in the slow cooker without it turning out to be a flavorless liquidy disaster? 😩😩 Barbecue sauce seems to cook well, as does a pack of Mexican spices on ground beef, but whenever I have tried to make pork or any other meat In sauce, something goes wrong.

I drained the liquid by the way because the liquid tasted of nothing.

Steak in a slow cooker?
Nope.
Use cheap cuts of meat.

Isn't the whole point of teriyaki that it should be cooked quickly, as in a stir fry or barbecue?

LaLegue · 14/05/2017 11:42

Oh God yes, also just realised you used a prime cut of steak. Slow cooking is best for tougher fattier cuts where the sinews break down slowly to make a gelatinous gravy and the fat keeps the moisture and flavour. Cooking a grilling/frying cut of steak for hours would be a waste of money and tough as old boots.

There are loads that are very cheap or even free on kindle, the Hamlyn 200 slow cooker recipes is good. They aren't always the sexiest or most exciting of cookbooks but they are practical for getting to grips with a slow cooker or a pressure cooker.

Could I have done steak skewers in the oven instead? Yesterday I asked them how I could cook it as I can't do diced meet on the hob (visually impaired). I have a Kenwood convection oven that also has a grill, but I don't know how to use the grill. I rely on the slow cooker and the oven for everything except fillet steaks in one piece and the occasional burger. But even when I make a stirfry I can do the vegetables on the hub but have to do the chicken or pork or beef separately.

For teriyaki you need a single piece of meat (boned chicken thigh or salmon works best) and you fry it for a relatively short amount of time, searing then cooking in the sauce so that the meat is cooked around the same time that the sauce becomes sticky. A slow cooker wouldn't work at all.
For your slow cooker use (usually cheap) cuts that are improved by slow cooking. Try pig cheeks, beef short rib or stewing cuts, lamb shanks. I promise it won't all taste the same if you put the right ingredients in.
I suppose if you really wanted to you could concoct a dish with stewing beef and teriyaki sauce, but it wouldn't be teriyaki.

Sorry, stepped out for lunch and this probably isn't useful now but 1tsp honey, 2 tsp soy sauce and mustard to taste. Mix it well, and put in a hot pan until it thickens slightly and then pour over meat.

Also wouldn't do steak in slow cooker - I imagine you could do it in the oven - season nicely with salt and a bit of oil and then put in a grill (and turn halfway), but don't know cooking time for your particular oven (I would do 20-25 mins in my 180C oven).

For the slow cooker it looks like you have a few recipes that work well with jerk sauce, Mexican seasoning etc. I also like doing a simple base of onions fried until golden brown (4-5 mins) then added with some tomato paste, favourite spices (chilli, turmeric, whatever you fancy), and a tough cheap cut of meat. Slow cook for 4 hours without adding any more liquid. Then add some tinned beans (the beans in water kind after draining water) and some herbs and finish off half hour later for a lovely meaty chilli.

Have never had anything good come out of my slow cooker! And if one more person says to me just bung it in and leave it I will shove the slow cooker..................
Maybe I need a book but my hatred for the bloody thing now has no bounds!

So glad it's not just me that has trouble. I love the idea of a slow cooker, and saw the message everywhere that "you can't go wrong" with one. I'm not a great cook anyway so that just made me feel worse when every attempt turned out to be tasteless mush! (And that was following recipes)

I've given up and think I'm going to sell mine! :(

Nicpem1982 · 14/05/2017 19:03

I love my slow cooker but I only use very little liquid in my recipes.

My faves are

Whole chicken
BBQ pulled pork
Butter chicken
Chilli
Chicken thighs braised in garlic with mushrooms
Thai curry
Chinese beef

I find it very useful for the nights I finish work later and have a small window for get dd fed.

You can go wrong though I made chicken satay in it once and it was vile!

pandarific · 14/05/2017 19:07

Okay op, step 1 is to know what cut of meat you have bought - this will let you know how best to cook it (ie if it is suitable for slow cooking). Step 2 is to use a recipe designed (or suitable for) slow cooking. Stick with these, and you will be okay.

Right now, how about you soak the meat in some more teriaki and do a stir fry, tipping in the meat 5 minutes before serving?

Blazedandconfused · 14/05/2017 19:15

Schwartz slow cooker sachets.

Since I started using them, everything had been absolutely spot on. The BBQ pulled pork shoulder is my favourite.

hellokittymania · 14/05/2017 19:18

Thanks bisquick, I will use this next time as it sounds really good.
