To ask for some tasty couscous recipes?

I love the stuff. Its very underrated. TBH I often just buy flavoured stuff but bought plain so I can add to various meals. Out for the day tomorrow with DS and DH at a car event. Really fancy something tasty and lovely looking. Bit lost as to what to do.

From recollection I have the following in the house I could chuck in with it, but it sounds bland:

Red onions
Red peppers
Radishes
Frozen mixed peppers
Chicken Oxo Cubes
Various spices/herbs
Garlic
Chillis

NB I dont like tomatoes/cucumber.

I like it cold with spring onions, green peppers, parsley and sweetcorn. And tomatoes.

Roast the veg down in olive oil, salt, lemon. Prepare cous cous with boiling stock. When veg done tear apart then tip into a sauce pan with sauteed garlic/chillis with the cous cous. Toss it up for a bit then serve.

I usually mix some harissa with olive oil and a bit of salt, stir the dry cous cous into that then add water, cover and steam. When cooked in chuck in chopped veg Inc onions/squeeze of lemon any fresh herbs I have, sometimes olives. Use up any bits of veg and herbs leftover. Lovely.

That sounds yum tshirtsuntan I havent any harissa but have printed off a recipe to make that earlier today to go with chicken.

Google Avoca Moroccan couscous with onion peppers and Celery and raisins.
Well I just put in what I have in cupboard and just use the oil dressing
Big favourite here.

You can roast radishes, yes but lightly. Will probably taste better raw tho - thinly slice them raw on the top when you serve

I do it as a cold salad very similar to t shirt: mix 1 cup cous cous with a bit of salt in a bowl. Add 1.5 cups boiling water and cover for 5 mins. Then add chopped green olives, finely chopped raw onion, lots of fresh parsley, lemon juice, chilli pepper flakes and chopped cherry tomatoes. I do the exact same thing with bulgur wheat.

It's really nice, You could maybe crush some chillis with oil and garlic and mix in the dry with that? It makes the whole thing tastier (in my opinion Grin)

Oops just seen you don't like tomatoes!You can totally omit them. Literally almost the same as yours tshirt:)

My DH likes an Ainsley Harriot recipe where you cook the couscous in chicken stock, add the juice of a lemon or lime, a couple of handfuls of sultanas, some toasted pine nuts and scatter a load of chopped coriander over the top. It's lovely with lamb or chicken dishes.

I do the ottolenghi cous cous when I can be bothered to get all the bits together! but the easiest was to replicate it is to

A) very slowly fry lots of sliced onions in good olive oil until they are soft and golden, add to cous cous with the oil.
B) pan fry little tomatoes until they take on some colour.
C) use more chopped parsley than you think you will need, then add some more.

If you have got golden raisins add them in.

Just chop the chillis with some salt (sea salt if you have it so it's grainy) and kind of drag the knife over so the salt crushes it into a paste then mix with a bit of olive oil.

Or Halloumi with all or some of the above? Feta is good, and a generous sprinkling of fresh coriander, (if you like it) will lift it to another level completely). Certainly red onions, lightly fried or pref raw, garlic, (same) roasted peppers, lime juce and an 'excellent; olive oil (Which magazine recently did an extensive text and found Toscano from M and S the best)
You can put anything you like in it really, and it'll be fabulous if you like cous cous, of course

Mix couscous with roasted veg , fry some halloumi, mix a bit of harissa paste with some yoghurt, get some salad: now stuff into a pita or wrap. If you're really hungry add some falafel too!
