To not cook a traditional roast on Sunday?

We have friends coming for lunch on Sunday and I don't feel like spending all morning preparing a roast. Do you think they would expect a roast or is something else ok? Haven't thought of other options yet but relatively effort free would be good! What do you all think?

I'm also quite iffy abot the taste of coconut (I love like cocount water, am ok with coconut curry or rice. But that's it)

it's ok with just vegetable oil (olive oil, in my case) and if you want a little (!) almond milk.
And it's really lovely with vegetable oil and cashews.

However you can buy 'flavourless' coconut oil in liquid form (Asda has an own brand one).

I do have to try this :)!

Well my beef stew and dumplings was a disappointment to me (everybody else enjoyed it) so I'm making plans for a mid week roast to compensate.

We did a sort of oriental-ish "roast" that was fried steak with mushroom and onion gravy, boiled rice, and steamed veg on the side. Nice change from the usual.

Well, we had a rather bonkers roast today.

DS - roast chicken, potato croquettes, raw carrots, yorkishire puddings and broccoli.

Me- roast chicken, bread sauce, gravy,roast potatos, roasted carrots, broccoli and cucumber and sour cream salad.

DH- leftover spagetti bolognese on toast. (He got home late from a weekend away).

Ds will not eat cooked carrots. I had made cucumber and sour cream with dill and onions yesterday and could not resist a dollop.

It was all round a bit of a roast travesty! (But oh so good. :) )

I've never cooked a roast. DH's roast are rather nice.

MIL's roasts are a bit... "eh".
