I accidentally added the milk and egg that was supposed to be a glaze Blush now I have manky looking soggy, spikey dough balls... any ideas how they'll turn out ??

Opal, my mouth is watering!

I'll share my secret tip a I got from a lovely lady I used to work with:

Never twist the cutter. Press it through the dough, hit it once with the palm of your hand and move the raw scone to the baking sheet.

Why? What difference does twisting the cutter make?

ILikeyourHairyHands · 23/02/2017 21:22

It squashes the edges down so they don't rise properly!

Crabbitstick · 23/02/2017 21:34

Might some cheese scones tomorrow. Inspired!

OpalFruitsMarathonsandSpira · 23/02/2017 21:38

Yes they rise better with the no twist method. Also plain flour and baking powder (75:5) instead of self raising flour seems to get a better rise too.

DonkeyOaty · 23/02/2017 22:01

I don't do the twist either. Nor do I use a cutter. I sort of pat the dough into a vague circle and slash into triangle pizza type pieces. Had scones in Devon slashed like that and thought them ever so stylish

Opal those scones look amazing !!
Very VERY jealous ! I'm going to try making another batch next week (prepping for a 1st birthday party) and think I'll use your recipe Instead of the one I have with its cryptic instructions on when to add milk and egg! Grin
