Paella with mussels, squid, prawns, mushrooms, chorizo (I know I just love it in there).

Avocado rice with garlic and herb chicken thighs. Chopped greens (spinach, young cabbage) etc. with onion and bacon and soy sauce

Chilli - two tins of mixed beans, two tins of received beans. Chopped tomatoes, onions, mushrooms. Add packet flavouring

Sweet potato mash( (I make with a hand blender as I don't like lumps but this is a bit extra) with pork belly and assorted chargrilled vegetables.

Diced lamb in pitta bread with onion and other various salad with garlic mayo as a homemade kebab

Screwinthetuna · 20/02/2017 22:26

I need to save this, I always get stuck in a rut (especially when DH is working away and it's just me and kids) and end up making really bland chicken rice and veg Cake

Sunnysky2016 · 20/02/2017 22:28

Most of the above in some fashion, although the kids will ask for a 'comfort food dinner' once in a while I.e:-
Cheese and potato pie, beans and sausage
Beans and cheese on toast
Poached egg on toast
Salad (lettuce, toma, cucumber, peppers, sweet corn and carrots) with chicken breast/Kiev etc
Corned beef hash
Beef stew
Chicken broth
Beef or chicken casserole, mash and green beans
Sausage casserole with warm baguettes
Jacket potatoe cheese and beans/ tuna mayo/ chilli

When I make chilli, slag Bol, casserole etc I will put in any veg I have- onions, mushrooms, peppers, celery etc to add to their 5 a day and bulk out the dish with less meat so it goes further.

We have a kitchen chalkboard too. Just me and DP, but this week's menu is:

Omelette, salad, crusty bread
Quiche (shop bought), beans, jacket potatoes
Chorizo and red pepper pasta
Delia's Basque chicken
(Delia does two nights)
Lasagne, peas, garlic bread
Sunday lunch out, scrambled eggs on toast for tea

Easy midweek things for us are stuffed pasta with sauce and salad, stir-fry with noodles, chicken fajitas, the aforementioned chorizo pasta. Most weeks we have at least one mince based thing which makes a freezer portion too. An easy, tasty meal we often have is chorizo scrambled eggs, over smashed avocado, on ciabatta.

PoohBearsHole · 20/02/2017 22:46
