if it is cooked well I would also use it over the next couple of days as well.

I saw documentary on the 90 s about supermarket meat, and they were taking out of date chicken of the shelves, washing it in bleachy water, and putting it back out to sell. That was regular practice. Don't know how it is now.

Chicken doesn't keep well so I'd be really thinking about how it smells and looks. Also, pay attention when it's cooking to how it smells.

I absolutely would. They have to be super cautious on use by dates because of scenarios like bloodyteenagers describes.

I buy all my meat from the butchers. It doesn't have use-by dates on it - I use my brain. Some of you should try it :)

True, but if the chicken has ecoli or salmonella in it, it was there yesterday as well, it didn't suddenly materialise today, is the point. If its cooked fully and proper hygiene is in place, the risk of ecoli/salmonella is the same as it was yesterday

Does displaying zero grasp of the process of bacteria multiplying over time make someone part of the lowest common denominator?
