...to eat out of date mince lamb?

Mince lamb- use by date yesterday.
It's been stored in fridge.
Would you cook and use it today?
Only adults eating it (no one with health problems/ no one elderly etc).
Would you throw it out or risk it?

So if I put it in the freezer tonight, after its cooled...then take out Thursday night to defrost. Cook Friday night. Does that sound ok?

Or just get it out Friday morning? Either way sounds fine to me.
