To ask for your ideas for a Boxing Day brunch for 7?

Just that really! I have no ideas. Nothing too heavy going or hard to prepare as I have 3 young children/toddlers to look after. I'm thinking eggs might be a bit of a drag en masse. Give me some easy, fun and delicious brunch ideas please!!

Probably no help, as not really a brunch.
But growing up, my favourite meal on Boxing Day was leftover Christmas dinner risotto; My mum would take all the leftover turkey/ veg/ stuffing etc, and gravy. And add some risotto rice and hey presto!

Some people might like something light, so I'd go for a buffet so people can help themselves:

Loads of salad - leaves, cuc, radishes, mustard and cress, baby tomatoes, pepper rings with dressings served on the side

Potato salad and coleslaw - home-made is nice, but if you provide shop bought ones no one will mind!

Jacket potatoes with cream cheese served on the side for those who want it

Plus as many of the following as you think you might need:

A whole cooked ham - cooked yourself or shop bought

Turkey slices that have been left over

Selection of cheese with crackers, grapes, celery

Quiche

Large whole pork pie with cranberries on top (supermarket deli counter)

Smoked salmon - so easy, you just open a packet and arrange on a plate!

Slices of Christmas cake

Mince pies with cream, brandy butter, custard or ice cream (or all four...)

Large plate of fresh fruit or a fruit salad in juice

A bagel buffet? Stack of different sorts, toaster on the table, plate of cold cuts, smoked salmon, cream cheese, sliced tomatoes, little gem lettuce leaves, sliced cucumber. Also jams etc for sweet ones.

In this house boxing day brunch is a dirty big "fried" breakfast (which is all not fried apart from fried bread and fried eggs). We do it once a year and it's lush.

OP I would keep it simple as possible, so no fry ups, that's a lot of work for 7 people.
I would do mostly cold, you could make a huge pot of scrambled eggs to serve alongside, but I would do as little hot food as possible..

I agree with everyone!

But if you don't want to do masses of eggs, you can boil quail's eggs in no time flat and they add a little sense of luxury and occasion. (We get ours from Morrisons or Waitrose).

But if you are looking for brunchy type things, I would say loads of cold cuts like hams, salami, salmon, cheeses. Bagels and nice bread. Fizz of course.

For brunch I love natural yoghurt with fruit compote - I jsut tips loads of frozen forest fruits intoa saucepan with some honey sugar and cinammon and cook down into a lovely mush.

Oh, yeah- the variety packs of cereal for kids is a great idea, SaucyJack.

FWIW, we also do a sort of brunch for Boxing day, but I usually have cold slices of leftover meats and gammon which i serve with hot cauli cheese - just because that is what we like here.

If you did something like eggs Florentine or huevos rancheros in a big tray in the oven, eggs for 7 would be quite easy.

I would buy in some stuff and have a Chinese banquet with duck pancakes, spring rolls, won tons, chicken soup. All the stuff on this thread so far sounds gorgeous but a lot of effort!

Mini omlettes?
They can be made ahead of time and frozen.
I use this as basic recipie but use peppers instead of ham or meat.
Bake in muffin tins in oven.

Poached eggs are easy. Put some cling film in a small bowl or ramekin or something, with lots to spare. Bit of oil to grease, break the egg in then tie up the cling film and dangle it in the pan to cook, hang the cling film over the side. You can cook masses of eggs in one go as you just line up the eggs next to each other on the pan. I don't know if I've described this very well but it's so easy and you get the perfect egg.
