To not understand the puréed fruit thing?

So whole fruit is ok. Mashed fruit is ok. But puréed fruit is not.

Why? I've read something about sugars being released but it makes no sense to me.

The cold pasta thing is a that the GI goes up as it cools and takes longer to digest - no idea why

Mellow - I suspect (but don't know) that is because (in general) enzymes work faster at warmer temps (not hot - which usually destroys them) - so the starch in the warm pasta would get broken down faster- so the glucose released faster...

Trouble is - cold pasta is muck! It's like chewing thick slime.

You can reheat the pasta and it retains the high GI -

So you can cook it, then eat it cold, or re-heated, but not freshly cooked?

Yep - it becomes a more resistant - cab - it's all fairly new research but handy for us diabetics
