I am SO bored of what we have for lunch - usually quiche and salad.
Please inspire me.
What can I have/add to my supermarket shop?
Am just preparing for me, two toddlers and so don't want to spend ages cooking - we all (with the older DC) have a good supper most days.
TIA

You lot are all so inventive.
Tuna, ham or egg salad sandwich for me in the week, bread & soup at weekends.

Frozen salmon ready meal from bargain freezer centre, it was £ 1, I think it was an M&S jobbie, bloody delish and cheaper than making a packed lunch for work. A lot more nutritious too.

Might add I had two nectarines too.

Baked sweet potato, tuna mayo, baby spinach and a bean and mango salad. Nom.

I recently learned to make sauteed mushrooms which I make with prawns in batter and sweet chilli sauce. This is a dinner though with lunch i am not fussy, just have a sandwich or eggs or something. This lunch time though I had chicken skewers with sweet chilli sauce and a red bull

falafel as well you could have with some pittas. Is lovely could add salad as well

SaucyJack · 01/07/2016 19:31

Sandwich/toast/microwave soup/salad. Nibbles for the toddler.

I don't do fancy lunch or breakfast. Cooking dinner once a day is quite enough thankyouverymuch.

I have a sandwich thin (whole meal or rye) with light philli instead of butter, a sandwich meat and salad. Then an apple, snackajack style snacks, and some dried fruit. Not the healthiest, but easy to eat in a very short break.

Pasta salad - pasta, cooked piri piri chicken, salad leaves, cucumber, cheese and a bit of mayo/pesto.
Also like bagel with ham, cucumber and cream cheese.
Beans on toast
Noodles and veg
Scrambled egg,beans and Quorn sausages.
I have a toddler and a new born so lunch needs to be easy and quick to make!
