Urgent- brunch for guests

I probably am BU posting here but I urgently need brunch ideas for guests on their way to DH and I now. A very close friend and her DH are traveling 250 miles each way to see us today. We have a nice day planned but I said I'd have a brunch ready at the end of their journey. They'll be here in less than two hours but there's a tesco open a ten minute walk away.

At the end of a for hour drive with an early start what food/ drink would you want?

I would go for smoked salmon on brown bread, lots of lemon. Or mackerel pate and toast (whizz up mackerel fillets with cream cheese, lemon and horseradish). The hot breakfast would overface me if i'd just got out the car after a long journey. Also, they may not be ready to eat immediately, or feel like freshening up in the shower or whatever, so a hot thing will be less flexible.

Or, if you want something hot, I would make carbonara. You could have crispy bacon ready, with the eggs beaten. Get fresh tagliatelle which only takes a few minutes to cook.

Or, smoked salmon pasta.

Huevos rancheros, hash browns, refried beans, rolls, fresh guacamole and salsa, fruit, yoghurt and granola.

Plus margaritas or bellinis.

I would do a variety - bagels with cream cheese and smoked salmon, bacon/eggs rolls or maybe croissants. Fruit salad and yogurt. Nice OJ and coffee.

If I was really going for it I'd do: Poached eggs, avocado w chilli, home made/pimped baked beans, sourdough toast, crispy bacon, slow oven roasted cherry tomatoes on the vine, pan wilted spinach, portobello mushrooms cooked with balsamic, pan fried potatoes, sweetcorn fritters, Greek yogurt, maple syrup, fresh berries, granola, shop bought croissants (assuming you have butter and jam at home). With bloody Marys and real coffee.

I'd just do the eggs, bacon, avocado, potato, tomatoes, toast and croissants with coffee if pushed for time.

Oh, yes definitely smoked salmon. Mixing horse radish and creme fraiche makes a fab sauce to go with it.

Croissants. Cut in half, fill with naice ham and grated cheese.

Bung in oven on a tray until cheese melted.

Serve with platter of sliced seasonal fruit, good juice, pots of coffee & tea.

What are your plans for the rest of the day? If it includes lunch out somewhere and you have access to freshly baked croissants and pastries I'd keep it light and fresh with a some pastries a nice, melon based fresh fruit salad, with yoghurt (optional honey) and large quantities of fresh juice & coffee/tea.
If not, full out full English...

I'd do SS bagels with cream cheese, lemon juice and black pepper, along with OJ (or mimosas if you have some fizz), coffee and tea. If someone doesn't like SS, then I'd offer ham or just the cream cheese on a toasted bagel, or a fruit salad and toast.

Smoked salmon and scrambled eggs are lovely together, but I'd be inclined to get a few things in and let them choose.

Toasted bagels, scrambled eggs, posh chipolatas, roasted tomatoes and mushrooms. Nice coffee and maybe some choc pastries etc to follow (and some Greek yoghurt and fruit/honey).

Ooh so many lovely brunch options you could go for apart from the Full English of course (which is always a winner)

Poached eggs with mushrooms and grilled tomatoes, sourdough toast. Add a few sprigs of thyme to the mushrooms if you have any. If you have time/the inclination I always think potato rosti would be good with this too (or hash browns - I would love you forever if you served me hash browns after a long journey)
Smoked salmon and scrambled egg on bagels or muffins
Smoked salmon and cream cheese with bagels is lower effort but still feels like a treat.
Bacon or sausage sandwiches.
Pancakes.

My brother makes an amazing baked fruity porridge but I'm not sure of the recipe or how long it takes.

I might also put out fruit, granola, yoghurt, juice. In fact that plus pastries would be lovely.

I like the cocktail ideas mentioned upthread too - or I love a Bloody Mary - maybe not so good for the driver though Grin

Sandra - cinnamon and cayenne pepper? Confused I can't imagine what that would taste like. Is it at all like normal brownies? Could you leave those out?

Pan au choc, croissants, full English components, toast and Jane etc. Good coffee and nice OJ.

You lot are the best! My cooking skill level ruled out a few options but now waiting for them (they're 5 mins away) is:

Strawberries and blueberries cut up in a big bowl
Natural yoghurt
Croissants and pain au chocolate
Smoked salmon
Bacon
Toasted sourdough bread
Toasted bagels
Avocado
Smoothie
Fruit juice
Fresh coffee

And there's loads of everything so I hope they're hungry!
