Sorry - I know this one has been asked before RE: freezing raw chicken breasts 8 hours after the use by date. Unreasonably risky?

I bought chicken breasts on Monday to grill for a dinner this week. Due to busy life stuff/other food needing to used up first etc... this never happened.They've been in the fridge all week. Got up this morning and noticed that the use by/freeze by date on the chicken was Friday April 8, I quickly put them in a freezer bag and stuffed them in the freezer (at 8am Saturday morning). Technically I was 8 hours late on freezing them although the cut of date seems somewhat arbitrary. Am I playing russian roulette with food poisoning when I actually cook them? Torn between hating to waste money on absurdly expensive organic chicken breasts and dying of salmonella etc... WWYD?

So if the chicken was in the USA then it would have still been in date. Because of the time difference.

I cooked and ate a chicken two days past its use by date on Thursday. It was lovely and we are fine. I had sandwiches yesterday. Still fine. The cat has just eaten the last of the pickings and he is way fussier than I am.

I buy and freeze loads of reduced on-date meat. Sometimes I buy it and don't get around to freezing it until the next day. I'm so addicted to bargain-hunting that I made a New Year's Resolution to stop buying and eat my hoard because it was getting out of hand and lovely meat could end up spoiling with freezer burn which defeats the object.

It's April and you still can't see the difference. I think there's a year's worth of meat in there.

The only thing that I ate and thought 'Hmm, maybe not' was a whole duck that I quartered and froze a day late. It didn't make me ill though. The legs are still in the freezer. I should cook them and put them out for the crows. They'd like them. Duck legs aren't great.
