to think this is NOT a proper banana loaf?

DP is a chef. We work at the same company, in different departments.

Today he informed me that because they have a lot of bananas leftover, he's making a banana loaf for the restaurant. Only it's not a real banana loaf- he's making a Victoria sponge and adding bananas into the sponge mix. That's it. That's his version of a banana loaf.

I love baking although can't cook proper food for shit and he freely admits that baking isn't his strong point as a chef. But he still insists his basic Victoria sponge with mashed banana is a real banana loaf. I rather unkindly suggested he may need to return to catering school. Who IBU here?

You don't even need to ask do you? YANBU. Can't you make the banana loaf? Otherwise it'll just be banana cake and won't do that gloriously grey sticky slimy thing that they do.

what's your recipe then? I use a basic sponge mix with a bit less sugar, plus mashed bananas and tis lush [shrug]

A banana loaf doesn't have eggs in. Victoria sponge does. He's going to end up with a wet, heavy cake!

erm, that sounds like a banana sponge - ie - a sponge with bits of banana in!

I would not be impressed if I ordered a slice of banana loaf and got that i would be mightily fecked off!

I love banana loaf but can not stand the smell of overripe ones so never bother. Shame really!

Ah, no eggs eh? never knew that - but as I use gluten free flour i reckon it probably needs the eggs too. Never had one turn out badly.

My banana loaf does have eggs in it. Less sugar and fat to flour though.

Victory Jammy. Get in there with your recipe and show them how it's done.

Hmmmm sticky slimy greyness. It has to be left at least 3 days before it reaches optimum grey sliminess though. On day 1 it's far too cakey.

Even better tell him to put chocolate chips in it and ice it with chocolate buttercream. Mmmmm.

I've just been to check our fruit bowl. 3 bananas. All bright yellow and very firm. DAMN.

He is wrong. Banana bread/loaf is a loaf tinny thing, not some circular thing sandwiched together with cream and jam.

Are you sure he is a chef?

He has invented the Victoria Banana. Congratulate him and tell him 'You are what you bake.'

I make banana loaf out of whatever is about. I always use eggs, brown sugar, sometimes I add sultanas, or coconut, or a handful of oats. It's different every time, but its still banana loaf unless the banana loaf police come and do a dawn raid. The kids eat it and the bananas don't go to waste.

But always in a loaf tin.

Ignore the hugely misleading picture next to the recipe (and the need for everything to be fairtrade) but this is without any shadow of a doubt the best recipe for banana loaf, thanks to the secret bonus whole banana...

He doesn't intend to sandwich it together with cream and jam but I do think he had attempted to invent the Victoria Banana. Who knows, it may become the new cronut?!

My current one had wholewheat flour, eggs, golden caster sugar and demarara on the top because thats what was available yesterday when they boys insisted on baking.

I tend to think banana loaf has to a)have bananas in it and b)be loaf-shaped.

Anything else is unimportant.

I make a banana loaf, but it does contain an egg (and raisins). And then you spread a bit of butter on the slices. Yummy Smile

Definitely heavier than a Victoria sponge-affair.
I'm not a chef, but your DH sounds bonkers [ grin]

As has been said, anything in a loaf tin with bananas is banana loaf.

Doubt the Banoria Sponge will make him the next Heston B!
