walking in and asking for a job. what to say

I know a lot of people don't apply online and get jobs or a trial leading to a job (by seeing people turning up and appearing in kitchen)
What would you say going in blind (for a shy hardworking person going for a commis chef job)
Asking for a fools guide to what to say 'exactly' when I walk in. In detail

walk in - say you want a trial to show what you can do - ask on thursday lunchtime. Offer to come in for thursday and friday night for a trial so that you learn on a slightly quieter night a little about how service there runs then are an extra pair of hands on friday. Have whites in your bag in case they tell you to start there and then.

Its not a sales job - they dont want to hear chat the want to see results and most good chefs are not huge on patter.

Well, Id focus on them, not me: I'd start by asking if they need anyone for and then go on to offer to do a couple of days as suggested above. Good luck.
