To want a croissant recipe that doesn't require 2 hours proving in morning

Fancy making them today for tomorrow morning- kids love them.

Gordon, Paul Hollywood and James Martin recipes all require lots of stuff and 2 hours proving in the morning (after 8 hours chill overnight) I want to do everything but he baking today and chuck in oven in morning

Any ideas?

I am afraid that Croissants are one of those things that, for mine anyway, good shop bought are always better!

Bake them today and pop in oven for 5 mins to reheat in the morning? The dough is rich enough to survive a few hours' storage if you ask me!

Agree totally with round. Croissants are not a 'home bake' thing unless you have absolutely nothing else to do all day and all night too.

I know but I fancy making them for the hell of it. Honestly the recipes are so long winded I couldn't get to making them today without cutting a few corners

They are terribly long winded aren't they? I love to bake and I love a challenge but never that much that I want to try croissants! I'd be interested to hear how you get on if you do bake them.

They will be a disappointment (voice of doom who has wasted hours of her life that will never be returned making croissants that didn't taste nothing like as good as decent bought one Sad )

You are supposed to have 8 hours chill before forming them and another 2 hours formed. Might from them tonight and chuck in fridge

I would make a double batch this morning, chill for 8 hours then roll into shape, put them into the freezer for a few hours, put the quantity you want on a chilled baking sheet into the fridge and bag up any spare for another day. They shouldn't rise too much in the fridge frozen.

But I second Just roll fresh ones in the supermarket!

You could try to do it similar to the way just roll do it - roll out a long rectangle 45 cms, score quite deeply into thirds and then each third into triangles, flour finely and roll up, wrap tightly in a cling film sausage and then with foil so it can't expand too much, then in the morning unwrap, cut into triangles, roll up and bake! You could probably freeze them in the sausage too.

Make the Kouign Ammans from Bake Off....they are way way nicer than croissants. And if you get them into the tins and shove them into the fridge over night, you just have to let them come to room temp before baking.

But I didn't prove them for two hours once made ini croissants this morning - only half an hour. Helps I've ha practice with the Jus Rol ones Wink

They look great! I make croissants regularly, double our quadruple quantities and freeze them after shaping, then put them in a cold oven the night before to defrost and prove and bake the following morning, and they always turn out really well

The making process isn't that hard - it's just remembering to roll out and turn the dough every hour or so
