to ask for help to cook for 3 vegetarians

Ignoring that these people have invited themselves to dinner tonight when I'm poorly self employed and it's the fucking holidays with the kids

I have to cook some thing really amazing for 5 adults tonight. 3 vegetarians... I'm a good cook, have well stocked cupboards and can go to local town for ingredients

What are your fail safe meals for entertaining?

In future, with curries, this coconut thing is lovely:

Green chilli, shedload of corinader, dessicated coconut, natural yoghurt, s&p

Also diced cucumber, red onion and quartered cherry toms, with some lemon juice and mint (or even a spoon of mint sauce) and some coriander, s&p

Too late now but BBC Good Food recipe for black bean chilli is a winner of a dish - quick, cheap, healthy, can be frozen, carnivores don't realise there's no meat

Curry always looks a bit vommy to me, but generally tastes great - I'm sure it'll be great Smile

Doesn't really help my stomach that dd3 threw up in the car on the way back from the shop :(
