help! forgot gravy!

we are having roast chicken, but I am doing it without veg underneath so no gravy will come. I have chicken flavoured soup mix and out of date Marmite. what do I do!!! help!!!!

Surely you'll get some juices in the chicken oil? Do all this in the roasting tin once you've removed the chicken. Add oxo if you've got one?

Then you add water (as much water as you need gravy plus a splash for evaporation), bring to boil, put a couple of teaspoons of corn flour in a cup with water to make a slightly runny paste and stir it in stirring all the time until it's thick.

Anything more than a pint use 2 cubes.

Any stock cubes? this any good? Especially if you cook the onions in the chicken fat?

Liquid will come out of the chicken even without the vegetables. Add hot water to it when you drain the chicken and then stir in some flour and a pinch of the soup mix for flavour and salt.

You can make gravy from the chicken juices no problem.

Once the chicken is done, lift it out and leave to rest. Pour off any excess fat(keep the meat juices though). Put roasting tin on the hob and heat up, scraping all the lively gooey bits off the bottom then stir in a tablespoon or so of flour. Keep stirring until this is all combined and cook for a min or two. If you have some add a glass of wine and let it bubble away. Keep stirring. Add stock, taste and season and simmer until it thickens to consistency you want. A sprig of rosemary or thyme added with stock wld be a good addition. Ditto a squeeze of lemon juice as you serve it.

When the chicken is done take it out of the tray, tipping it to get juices out of the cavity. Put chicken to rest under foil. Now sprinkle your soup mix into the tin and tip over boiling water and some wine. Stir and scrape all little chickeny bits off bottom of tin over the hob. Add some flour if needed and keep stirring. Strain into jug. Voila, gravy.

Marmite is never in date. We all know it is made from rancid used axle grease but can anyone provide the formula for the additive which makes it extra nasty?
