As the subject says, I'm an AIBU virgin so please be gentle.

Rant of the day: I am so angry at these sites/television programmes where they have recipes costing x amount per portion Angry So what if you only used a small amount of the expensive ingredient you bought, it still cost the expensive price to begin with!

YANBU. There's also the assumption that we all have massive freezers with which to store all the expensive ingredients once the tiny portion's been used. Mine can fit some peas and some potato waffles, and that's it!

No one is forcing you to buy anything or to even read/watch these things. So why waste your energy being angry about it?

I know what you're saying, when a recipe calls on lots of "store cupboard essentials" - it does take an initial cash outlay to stock it up in the first place even if the stuff will last years and only cost pennies per portion. I do think some celeb chefs etc are out of touch with reality as they are so used to well stocked homes and work places and can never relate to starting from scratch.

try buying one ingredient/spice etc at a time to build up slowly? buy as a treat instead of getting a ready meal or chocolate/wine?

It's slightly annoying. I don't get angry about it though! A lot of cookery shows use too many ingredients for it to be cheap enough for me to consider making it. We have a few herbs and spices in the cupboard and I can't really afford a full on spice rack.

We have a decent sized freezer but still not much room for leftovers.

Get what you mean. I watched superscrimpers where they made this big deal of making something from scratch and said it will only cost x per portion but in reality the ingredients cost a lot to buy in the first place. Ok they would have spare ingredients to use again in the future but some people don't have the money needed for the initial outlay.

Bloody Jamie Oliver and his 'oooh this small £9 organic chicken'll feed 4 adults @ bloody 1.50p each or something and then feed 4 more adults for nothing with chilli, spices, sauces, herbs and other 'cupboard basics' thrown in the next day too.

Rubbish.

Well it all depends, a girl called jack does this on her blog and the recipes are very reasonable and based on what she would buy using her £10 food budget. I think it depends on the sort of things they expect you to buy and whether they will be useful for lots of recipes.

you can get 9 large chicken thighs, big pack of mince, and either fish or pork at ASDA for £10.

some of is have 4 older kids who eat for fucking England and dh too.

Jamie jas lost touch with his organic tiny chicken.

I think yabu. To get so angry about something you are not forced to do. Yes you might have to spend on those expensive ingredient so why not just make other dishes which include those ingredients.
I have bought the Jamie Oliver book and I think it's brilliant! He uses the same ingredients in many other recipes. I think it's also up to you to be creative and think of other ways you can use the ingredients.
Yes some meals taste as good as they do because of those ingredients, if you don't like it don't make it.

i like jamie oliver...but what i dont get it why he is this cockney talking essex boy when in actual fact, having met his parents and sister...and they very well spoken and to some probably quite posh!? all seems a bit of an act sometimes which is a shame!

YANBU. So-called "store cupboard essentials" do actually go off eventually, especially dried herbs and spices.

Every couple of years I seem to chuck away a good 20 quid's worth of now tasteless dust that dh has bought for some special recipe and we've never used again.

While I get what you mean, you're not really going to be able to cook a varied array of meals from scratch without building up your spice collection. If you look in small Asian run shops you can often find big bags of spices much much cheaper than the supermarket. And Chinese supermarkets also have a lot of items cheaper (and really cheap noodles!)
Some ingredients you can just ditch. Never bothered with saffron - add a tiny bit of turmeric to paella to get the colour. And who the fuck eats capers?
The one who really winds me up though is Nigel 'smugo' Slater. He's always banging on 'oh I'm not a chef. I'm just a cook trying to make a nice supper from the ingredients in my cupboard'. Then adds the most ludicrous things 'from his cupboards'. Crystalised violets once! Fucking twat!
