As examples: 'the point is that the silly phone connectivity problems etc may happen in the third world but it's hardly a worry for them when they're worried for their life/getting food etc.' and 'Surely third world problems are the 'have I got enough food/water/medicine' kind'

Both = first world residents attempting to define the third world at the expense of the lived experience of third world residents.

And 'Also the true first world problems like 'shall I get the 16gb or iPhone 5' is hardly Likely to happen in the slums of Africa etc.' creates an artifical them and us first/third world opposition. Deprived estates in the first world don't have those problems either.

Maybe I am misunderstanding you but I'm not sure DH's family would agree with you. If I asked them what was more important hassles with phone conectivity or the fact that they don't have running water every day I know what they would answer.
