to ask for help with my smoked salmon recipe?

Yeah I know, not an AIBU but I'm desperate and need some foodies to come and help me.

I need an absolutely storming smoked salmon recipe (for a starter). We are having friends for dinner and one friends new girlfriend will not eat anything apart from smoked salmon and chicken. Oh and that said, she is apparently an amazing cook and I am very average, verging on a bit shit. So, please help me not to make an arse of myself. I want it to be simple and really, really nice. And, no I don't know why I'm so bothered either but I am a pathetic people pleaser. Grin Grin

Try BBc good food website. Recipes are graded according to ease and comments help you to figure out what worked and what didn't plus any tips. I love smoked salmon with brown bread and lemon. Simple!

Well that's what I thought but I'm told she cooks fantastic food for everyone else and only eats about 4 things herself!

Cheat. And buy a smoked salmon mousse wrapped in smoked salmon from somewhere like M&S. Dish it up with brown bread, or thin toast.

So stop worrying about it.

Or go to M&S and buy a smoked salmon terrine or something.

How about blinis (you can buy them..) served warm with lemony creme fraiche, smoked salmon and a sprinkling of caviar (doesn't have to be megabucks) or salmon roe?

If she's really that fussy, I'd just get naice smoked salmon, and serve it up on a plate with some pretty-looking salad leaves (rocket / lambs ear / watercress), a vinagrette (either in a little jug thing or directly on the salad), a wedge of lemon, a slice or two of crusty bread and black pepper on the table available for grinding.

She sounds annoying, btw. Only eats smoked salmon and chicken? Hmph.

I love the lemony creme fraiche idea.

As an aside, I don't understand the appeal of blinis. Too mushy, especially when served with other mushy toppings. I don't hate them or anything, but would prefer something with a bit of bite. That said, blinis + smoked salmon is a classic, so it is probably me who is bu here!

You and me both, riverboat, plus the whole smoked salmon/bagel/blini thing has been done to death.

This, on the other hand, is a posh twist on the ubiquitous prawn cocktail which serves 4:

1 cucumber
pinch of salt

200g smoked salmon, diced
1 small red onion, very finely chopped or blitzed in a food processor
generous pinch of freshly ground black pepper
200g plain yoghurt
sprinking of paprika

2 lemons cut into quarters (remove pips)

Wash the cucumber and cut off a few slices to keep for garnish. Peel and remove the seeds and grate it into a colander or sieve lined with kitchen paper. Add a pinch of salt and leave it to drain over a bowl for 30 minutes.

Squeeze the drained cucumber in a clean tea towel to get it as dry as possible, combine with the other ingredients, spoon the mixture into small glasses, sprinkle with paprika, garnish with remaining cucumber slices, and serve with lemon quarters and hot crusty wholemeal rolls or thinly sliced brown bread and butter on the side.

As it's winter I'd opt for smoked salmon frittata for the starter with chicken chasseur or cacciatore as the main.
