cooked rice being left out on side.

ok mini rant , but tell me if Im wrong. my DS has cooking next week and risotto (using long grain rice )
He has to bring in precooked chicken to add to said rice and sweetcorn,mushroom and stock .
My problem is ,if the finished dish is l put in the fridge when the rice is still warm I am seriously concerned about Listeria (food poisoning )
So tell me am I worrying for nothing .

The rice should be cooked, run under a cold tap in a colander, and then refrigerated.

I have had food poisoning from rice and it was horrid.
i was v v p[oorly for about a week.
personally i dont reheat rice because ofthis.
its up to you but i dont think YABU.

FWIW I heated up rice for my tea tonight that I had cooked last night and left sitting on the worktop for 24 hours. I do this sort of thing on a regular basis and have so far survived. I also had some of that rice reheated for my lunch without putting it in a fridge.

I have done food hygiene training and was shocked to hear how dangerous rice was and also shocked that it hadn't killed me if it was that dangerous. I haven't changed my habits but I wouldn't serve it up to someone else for fear of scaring them.

Millions of children in Japan over many years have taken rice to school for their lunches without ever putting it in the fridge, goodness knows how they survive too?

Re heating rice is dodgy apparently due to spores on rice that may not be killed during cooking. However, I am sure every Indian/Chinese take away on the planet reheats rice and for the most part we are all fine. A nuke in the micrpwave will be fine. And isn't it law to to eat your kids cooking even when they are 3 and chick everything on floor anyway

Modern fridges can handle hot food. It's safer to put it straight in than leave it out. I'd worry more about the arsenic in rice.

Fanny you and I are living on the edge. Ifeel positively wild after this thread. I don't get out much, but I take some crazy risks with rice!

Maybe I should name change and never be heard of again so everyone can say 'it must have been the rice!'.

I do seriously wonder if the whole deadliness of rice could possible be based on a miscalculation, long forgotten.
