To eat 2 of the delicious muffins I have just made?

... so it's rainy and cold, and rather than do my ironing I've been pottering in the kitchen and have just made bread muffins for the first time.

A bit faffy, but now that they're cooked I've just had 2 for my lunch, dripping with butter.

Far superior than the BOGOF in Morrisons - these babies ain't going to last long in this house!

You have to test them, what if there had been something wrong with them? You can't just test one either, it might be a fluke.

On a day like this, YANBU. Especially if they were lunch (I get annoyed when I make choc-banana muffins and DH scoffs 2 or 3 at a go. That's just greedy)

OOh, sorry purple

It's american, so apologies for the cups!

4 cups white bread flour
2 tsp baking powder
1.25 cups lukewarm water (although I ended up adding a bit more)
2 tblsp yeast
1 tblsp sugar
1 tsp salt 2 egg whites
Semolina for dusting (recipe said cornmeal but I found an out of date bag of semolina that turned out just fine!)

Add sugar + yeast to water and leave to bubble (15 mins in a warm place)
Then add to half the flour and mix.
Whisk egg whites and fold into mixture (I added about half a cup more water at this stage)
Fold in the rest of the flour
Leave to rise in an oiled bowl until doubled in size (about 1.5 hrs)
turn onto a floured board, knock back, roll out to 2cm thick and cut into rounds with 3 inch cutters
Coat with (out of date) semolina and put on a board. Leave to rise again for about 45 mins (they won't rise much)
Lightly oil a frying pan or griddle pan. Fry on low heat in batches for 3-4 mins on each side - then repeat, so you end up frying them for 12-16 mins in total.
Transfer to a cooling rack and see how long you can resist eating one!
