To think that my pumpkins are indeed bewitched?

I have two pumpkins; one large and one small and the blardy pumpkin flesh is coming out of my ears!

So far I have made two big batches of curried pumpkin soup, roasted pumpkin seeds,a batch of pumpkin curry and spiced pumkin cake. I still have some left!

It's like day of the trifids in here and my freezer is chocca! I think I'm just going to have to make a massive curry and freeze it, squeezing it into every nook and crany. Is is possible to freeze the uncooked flesh?

Me too. My not so dear at this very moment parents brought two enormous pumpkins round for the DDs to carve. They are massive, I could barely lift them after they had been scooped out. DDs had to do them in, situ as I couldn't lift them off the hall floor where DF had dumped them.

I have 3 jam pans chock full of pumpkin, and absolutely no idea what to do with it.

PS This is the DF with the gorgeous boil that I wasn't allowed to tamper with touch. Feel free to join in the [hangry] thoughts.

You can roast the seeds once cleaned up. Just brush with veg oil and lay in a baking tray at 150c for 40 mins. Then sprinkle with salt or paprika. Once cool they can be kept in an airtight container.

^ all will freeze very will :)

You could blanche it then freeze it (put in boiling water for a few mins, then put straight into cold water to quick cool, drain then freeze), and it will be fine to use for stews or soups or pies.

There are many ways of eating pumpkin, but do what you will, it still tastes like cotton wool. Give it to the dog - DBF will dogs eat pumpkin?

Chickens eat pumpkin. I was going to make soup but I couldn't be arsed changed my mind.

I have to confess mine went straight on the compost. Can't bear pumpkin. But I have carved the rest to look like Chewbacca.

Ok here goes.

Pumpkin soup
Put cubes of pumpkin, sweet potatoe, red onion, butternet squash in a pan of water. add a vegetable stock cube and/or bullion, curry powder to taste and red lentils. Boil until veg is tender. Leave to cool then blend and reheat. Add seasoning and/or cream to taste.

I don't do quantities prefering to just bung it all in.

Pumpkin curry is almost the same except I drain the veg cubes and add a tin of tomatoes, a slug of passatta and fresh, chopped tomatoes.
