Courgette and onion, chopped up and liquidised.
So it must be damn good for me mustn't it
as it doesn't taste good

Has anyone tried those Yorkshire Provender soups that most of the supermarkets are selling now, they are in the fridge section and they are absolutely gorgeous. The veg, paprika and ham one is my favourite at the moment, but all the ones I have tried are great. They do taste as if they are home made too.

The other lovely one I have had recently is Covent Gardens Pumpkin and Bacon, which I am going to make myself later this week.

Sauté courgettes, onion, garlic and tomatoes. Add vegetable stock, simmer then liquidise. Serve with swirl of cream.

You can add pepper but there will be other tastes than just pepper.

TheLadyEvenstar · 25/09/2011 14:32

ohhh "a swirl of cream" very proffessional!!!

whatdoiknowanyway · 25/09/2011 14:58

Ok a dollop then
And more likely of yoghurt or fromage frais than cream as that's what we have in the fridge. But at least it tastes of something.

I actually can't stand courgette, but I went to see a friend who made this soup., and it was the only way I could bear them (it was nice when she made it). Then I came home and a neighbour presented me with a HUUUUUGE marrow. So I texted her quickly and asked for the recipe.

Get those vegetarian bacon bits, they would work. :)

StealthPolarBear · 25/09/2011 17:57

mmmmmmmmmmmm
ooh I'll let you know how it is
Basically I just want to feel virtuous and eat my nasty soup that consists entirely of vegetables and seasoning :o

Try adding some pasta for thicknss and garlic for taste

TheLadyEvenstar · 25/09/2011 18:02

celery works well too

WilsonFrickett · 25/09/2011 18:08

Roast the courgettes first next time, concentrates the flavour and gets rid of some of the water. Was it courgettes or a marrow though OP? Cos marrows are just nasty....

stepawayfromtheecclescakes · 25/09/2011 18:09

my advice, buy the recommended soup as suggested by squeakytoy and bury the empty packet well down in the bin, hey presto yummy 'home made' soup simples

BoastingByStealth · 25/09/2011 18:10

Try adding lentils and boiling up a ham shank too, use the water as stock (and add Bouillon too) carrots, onion, potato and lots of pepper. add the meat

My local shop sells THE most delcious Spicy Lentil and Courgette soup. MUST ask for recipe.

Ephiny · 25/09/2011 18:13

I've made courgette soup with courgettes from the garden that I'd accidentally allowed to grow into huge marrow-shaped things. It was OK, but a little bland - wouldn't make it again unless I had an excess of courgette to use up! It helps if you fry the onion first, and add some potato to thicken the soup, plenty of seasoning too.

LittleMissFlustered · 25/09/2011 18:19

I'm making soup for the freezer tomorrow. Leek and potato and a chunky veg. Kids love the stuff at this time of year, and as funds are tight it's a bit of a blessing really!

StealthPolarBear · 25/09/2011 18:21

I will not be making it again unless I have to
