not to peel mushrooms?

OK if they're those great big ones, I'd peel them, especially if the skin was looking a bit manky. But if they're just normal sized, fairly fresh mushrooms, then I'd just give them a rinse, maybe cut of a bit of the stem and use them.

My mother thinks this is disgusting practice, especially as mushrooms are grown in horse manure.

Confused at Pan. Are you worried about veggies inadvertently eating horse shit that contains meat? What about vegans? They might eat a lot of mushrooms and end up eating animal by-products by mistake!

you are not supposed to wash mushrooms, makes them all soft and also takes a lot of the flavour out of them.

I dont peel them, just wipe the worst bits of horseshit soil off them.

MardyBra - I refer to the disease that rests in animals' do-do that are carnivores. No such prob. with vegatarian animals. You've got to think these things through properly.Smile

Any mushrooms entering our house have the larger chunks of droppings wiped off and are then lobbed into the pan. No one has died from my slatternly nature so far.

remember a while back having a sensual ridiculous exchange with Boco about this very subject. You'd be amazed at how much inuendo you can mine from mushroom-peeling. Well, we did.Blush

I don't peel - life is way too short - have also worked with several chefs over the years and have never seen them do it either - wipe, remove stalk (depending on what they're making) - but never washed and never peeled :)

You are cooking them , so most bacteria that could possibly be there should be pretty much wiped out. Considering most people eat apples, tomatoes and many other fruit without either washing or peeling you're unlikey to kill your self with your un-peeled mushrooms.

Never peeled a mushroom in my life, I do sometimes rince them if they look a bit grubby, never thought about it making them soggy, maybe I'll wipe from now on

Depends on how old they are. I wash them if they're new and white, peel them if they're starting to go a bit grey and if they've opened up so aren't still in their "button" stage. If they're halfway between stages, then I rub them in the water and a very thin layer of skin comes off.
Big ones - always peel them.
