Dried sage? Not keen - but I'm not that keen on sage in general. Dried mint is nice.

Btw, on the smuggery front, I have two kinds of sage and four kinds of mint in the garden. Do I win a prize? Grin

Ok, I've got some herbs in the garden. Which of them should I put in my omelette to make it as tasty as a mixed herb omelette?

Yes dried sage works well in stews with white wine in. It's a different flavour from fresh sage but I like it. I do love sage though - can't abide dried mint. It's all personal taste I suppose.

Parsley, chervil and tarragon are all nice, so is marjoram, or lemon thyme. Have you never tried fresh herbs in omelette then?

Have always got mixed herbs (or even italian mixed herbs in cupboard) always put them into a bolognaise sauce. In fact the other night I had 7 friends round from work and cooked lasagne, and everyone said how lovely it was and 2 wanted the recipe (I was thinking WTF its pretty basic, to me anyway, but obviously maybe better than their version, mixed herbs and all).
Rember when my 23yr old DS was a baby and going to one of NCT friends coffee morning and one of them saying in a very posh voice (though she was lovely) 'The nanny throws mixed herbs into everything' and most of (probably me included to hide my mixed herb usageBlush) us laughing as if to say 'Oh how common / working class!'
Still remember that all these years later, and now see this thread!

I've got parsley, mint, thyme, coriander, sage and basil - this is the first year I've ever tried growing them and I only use them if following a recipe, I don't freestyle iykwim.

I would use parsley, thyme, sage and basil - but not necessarily all together.

YANBU Dried basil tastes like the devil's toenail clippings- the rest of the mix just taste like the contents of the hoover bag which you have added to stretch the toenail clippings out.
I think dried thyme is okay and dried oregano is more than okay, as it's more intense than the dried stuff but you need to put them in a sauce so they can rehydrate a bit.
And yes I'm a snob but only a food snob!

I grow my own herbs and generally use fresh in everything, but there's nothing wrong with bunging a couple of teaspoons of mixed herbs in a soup or stew - especially if it's raining or too cold/ dark to go outside and pick them. They're good in dumplings too.
