To think my scones should've risen?

Help. I just made cheese scones following exactly the recipe in the Bero book (a gift from my lovely MIL who is sick of hearing me moan about not being able to bake Grin). They are really tasty though!

Why did they come out so flat? Should I add some baking powder to the recipe even though it uses self raising flour.

Please help me oh wise Mners.....?

Yes they should! Tsk! I would have firm words with them.

But yes, baking powder is good. I don't always trust SRF to rise properly TBH,

Flip - I'm hungry and the thought of cheese scones is making me dribble Envy

I did have firm words before i scoffed them Ormirian!
Could the oven being too hot affect it Euphemia? It said 220 in the book, which is what I baked them at on the middle tray, but mine is a fan, should I have adjusted?

Saint Delia says the primary reason for scones not rising enough is that the dough has been rolled too thin in the first place - I think she says the dough should be about two cm thick when you cut the scones out.

And definitely get an oven thermometer rather than relying on your oven to be accurate - you would not believe the difference. Particularly at high temps(and yes, you should have adjusted for a fan - take 20 degrees off) where a percentage difference can make a big difference to the actual temp.

Rolled too thin was my problem. I now make great scones!

I use one off the BBC website. This is it. They turn out great. There are recipes for cheese and sultana ones as well. I use a small cutter and make mini-scones. People blinking LOVE them. I have to keep rerolling the dough or you get very few!

Yes, you need thick dough, but also you need to handle the dough as little as possible, over kneading really stops them rising.
