WTF am I supposed to do with ti? Why do they put them in? Give me some chard or kale or even a buttnernut squash FGS, not this hard unripe pumpkin thingy.

Grate the edible part up finely and use instead of carrots in a carrot cake?

Tis my solution to many veg box odduns. I also have a book of cake recipes I use regularly (Red velvel Chocolate Heartache.

Is it a Crown Prince squash? If so, do not try to peel the bugger. It bites back.

Get an axe to the thing then roast it.

Skin comes off like a dream then.

QuelleLeJeff · 11/03/2011 18:11

I love squashes.

Roast it with some cumin, garlic, chilli flakes, onion and a splash of olive oil and then bung it in a saucepan of veggie stock and simmer it all for a bit till squishy, blend and Voila! Soup. Delicious soup.

AutumnWitch · 11/03/2011 18:11

velvet sorry - I'm sure I previewed that!

PepsiPopcorn · 11/03/2011 18:12

Steam and mash with herbs and cream as a side dish?

HerBeX · 11/03/2011 18:14

Well I'm not sure if it is an unripe pumpkin or just a green squash that's supposed to be green.

I knew someone would suggest risotto

Do I have to bake it first?

Just slice the bugger in half, scoop out the seeds, add oilve oil and seasoning and bake it. I had one the other day, it was small and green but yellowy orange inside, quite nice, not as instense as butternut but similar.

KnottyLocks · 11/03/2011 18:24

Crown Prince My arse!

choppitychop · 11/03/2011 18:27

Just cut it up into 1cm thick long slices (don't bother peeling it), put it all on a baking tray, slosh over some olive oil. Put a bit of salt and black pepper on on roast it for about 40 mins.

Goes well with something bacon-y or blue cheese-y, eg chicken stuffed with blue cheese and wraapped in bacon.

I love the little squashes and you can usually just eat the skin if it's roasted.

Kabocha?
Squash is great for soup, or cut in half, filled with seasoned rice filling and baked.

We got that this week and at this very moment oh is frying up pancakes. Chop it up, roast in oven, scoop it out, put in bowl with flour, onion or spring onion, soy sauce, salt, sugar, coriander or parsley, Maybe chilli, you get the idea. mix and shape into little pats and fry. Serve with soured cream or somethingnsimilar. We're having it with tzatziki and fried eggs. Took me 2 minutes to bung in the oven to cook this morning and 2 to mix it all up tonight. Yummy!

HerBeX · 11/03/2011 18:39

Oh fuck it now I've lost it.

It's not in fridge or anywhere else

Am looking for it to see if I can cut it up, I think it's too hard to cut without baking first, how do you lot manage to cut a squash raw? I have never managed that even with a butternut squash

Cannot imagine where it has gone...

colditz · 11/03/2011 18:40

A very big starp knife.

cut it in half, and scoop the seeds out

roast each half

Scoop flesh out when soft, discard shell. Mash flesh with butter and pepper and salt.

It means you don't have to bother with peeling which is a mare with squashes.

FromGirders · 11/03/2011 18:41

Hmm, are you near me? I have a huge big green-ish pumpkin in the bottom of my fridge. Think i'm going to try baking it with ham.

Thistledew · 11/03/2011 18:51

Depending on size- one portion or two? - either cut it in half or cut the top off. Scoop the seeds out and roast it. When it is soft, serve it filled with cottage or cream cheese, herbs, and a squeeze of lemon juice.

Yum!

OP - We got one that looked like a small alien. The children wouldn't let me cook it in case it was an alien. DH drew eyes on it which didn't help the cause.

sethstarkaddersmackerel · 11/03/2011 18:54

I'm sure in future they will be quite happy to replace your lovely squash with some extra kale.
