To Cook an out of date chicken?

My DH is a manager at a food production plant - chicken is very different to beef.
We eat usually eat a chicken less than 2 days after slaughter, the quality is far higher due to the freshness.

To even get a shelf life of seven days, carbon dioxide is pumped into the packs of chicken fillet, because it's a day older than whole bird Wink

Chandon is right, and once meat is off then no amount of vinegar or overcooking will get rid of the toxins. But if it smells ok then it is not off and you'll be fine.

Where the vinegar comes in is to wipe the slight 'sliminess' off beef, pork or lamb that is otherwise ok. Then the bacteria or toxins are just on the surface and can be removed by vinegar but not by water alone. But never wash a chicken in the sink as raw chickeny water droplets can bounce off onto your draining board and other kitchen surfaces where they can transfer to otherwise clean plates and utensils.

I smell check anything that I open even if it is IN date.

I have bought pork and chicken from supermarkets before, in supposedly air sealed packaging, that was well within its use by date, and it stunk to high heaven.

If anyone thinks that because it is in date is is automatically ok to eat then they are the ones taking the risks. Use your eyes and nose on the item, not just the label.

That's the only way. Off chicken is unmistakeable.

These use by/sell by dates are a huge con to get us to throw stuff away. Parents grew up in the depression and the war -wasting food has always been anathema, on principle.

A bit late in the day for this response, but worth bearing in mind that even if the chicken itself smells OK, it is the juices that can gather in the packaging that are most likely to cause problems as they go nasty much quicker. If they smell at all (they should have virtually no odour) then the chicken is a no-no.

cooked it but chickened out in the end - you lot put me off with namby pamby ways - can't believed I caved but was already making a casserole so had plenty of alternatives. Just feel sorry for the wee chicken that gave it's life for nothing Sad.

And no one got my movie quote: 'Damn you all to hell!'
