I don't think Nigella is mad at all. She's a clever business woman who knows exactly how to market herself in order to appeal to the largest audience possible.

She has turned into a bit of a parody in the same way Gordon Ramsey/Jamie Oliver have, just the TV bods I expect: "The public love it when you lick the bowl lasciviously/swear/be a diamond cockney geezer, so amp it up a bit" and her botox is too much.
Yet she is still swoonsome, very intelligent and just sexy as hell.

I have never dared to do the brining thing. Doesn't it render the meat dreadfully salty?

Me too Litchick, though I'm reliably informed by several people that it is fantastic, and not overly salty. However, having paid some quite obscene amount of money for my huge free-range bronze I can hardly bear to take any chances with it. Blush

Plus, Nigella says that you can't use the juices to make gravy because they are too salty - and that puts me off somewhat. I need my turkey dripping for toast on Boxing Day breakfast!
