I suppose there is no hope of pancakes for an egg and dairy allergic person?

Has anyone ever managed to create a pancake that is remotely edible?

DS1 is very good about his allergies and I always manage to provide him with alternatives but am always stumped on pancake day.

I'm sure you can find something...an egg replacer that I know of is called Ener-G, and you could use soy or rice milk instead. My son and I can't have gluten, and I know the mix I use for pancakes is called Pamela's. MAybe they make a product? Good luck!

I had to do a gf diet for a while, and made 'pancakes' with rice flour and milk - no eggs. It was a long time ago so I really can't remember quantities, and I think I put a bit of baking powder in too. They were nice enough, but not a patch on bread which was what I really trying for (without having to do all the faffing with yeast etc).

Found this online for you-maybe you could give it a try?

Ingredients:

  • 1 cup Plain Flour
  • 1/2 teaspoon B-Carb Soda (Baking Soda)
  • 2 teaspoons Baking Powder
  • 1/4 teaspoon Salt
  • 2 Tablespoons Sugar
  • 1 cup Soy Milk (or water will do)
  • 1.5 Tablespoons Vegetable Oil
  • 1/2 teaspoon Vanilla Essence

Method:

Sift flour and baking soda/powder and salt.

Add sugar. (Whisk these together is you don't have a sifter.)

Add Vanilla and Oil and half the soy milk. Whisk together.

Gradually add the rest of the soy milk until thick pouring consistency.

Heat Frying pan - needs to be reasonably hot. I used vegetable oil - but you could use spray. Oil/spray for each pancake - they do stick otherwise. I found with this recipe the pancakes worked best if they were on the small side. If the were too big they were difficult to turn.

There's a tasty mix available for pancakes made by Orgran, with apple pieces & cinnamon - it also happens to be gluten free - you can make it up with rice or soya milk (I use vanilla flavoured soya) - DS loves it and so do the rest of the family who remember what 'real' pancakes taste like! Very yummy with maple syrup, plus easy to make - they come out like the thicker American style pancakes. I usually find it in the Free From section in Sainsburys/Tescos/Waitrose.

I did try making my own once... I shan't again!
