Basically every evening DD either eats shepherds pie, fish pie, baked beans & fish fingers or chicken & veg with couscous/rice.

Yesterday made carrot & coriander soup then went to put stock cube in (low salt one from Boots) which said its not suitable for her. Didn't think I would have to check a stock cube that will teach me!! So soup then came out v bland as I used water instead and she didn't like it much

She seems to have runny poo with oat milk and also want to avoid egg ATM as not sure if she will react.

She is not great at finger foods, although will feed herself once initial hunger is sated iyswim.

The only thing she doesn't like is pasta so that is out too.

Also I am a pants cook so easy recipes if poss Also things that could be frozen would be good too.

TIA

Hi. Don't know if these 2 recipes help?
The chicken & banana patties sound a strange one, but my little boy loved them (I suppose it was because that was all he knew. It also helped as an idea for snacky food when we were out & about, as he would eat these cold.
Good luck!
Creamy salmon with vegetables (Freezes well)
Olive oil
½ leek, finely sliced
1 carrot, peeled & diced
3 broccoli florets, cut into smaller florets
45g frozen peas
200g fresh salmon (unsmoked), skinned and checked for bones

For the sauce

300ml appropriate formula milk
25g dairy & soya-free margarine
1 tbsp rice flour, or cornflour

  1. Place the carrots and broccoli in a pan of boiling water and simmer for 4-5 minutes until soft. Drain.
  2. Heat the olive oil and gently fry the leek for 2-3 minutes.
  3. Add carrots, broccoli and peas, and fry for a further 2-3 minutes.
  4. Add salmon pieces and gently fry for 4-5 minutes.
  5. Set salmon and vegetable mix to one side. In a separate pan, heat the margarine until melted.
  6. Remove from heat, add flour and stir until a paste is made.
  7. Gradually stir in the milk, a little at a time, then return pan to a low heat, and stir until sauce thickens.
  8. Pour sauce over salmon and vegetable mix, gently bring to boil, and simmer for 1-2 minutes.
  9. Serve on a bed of cooked rice, or rice and corn pasta.
10. For younger babies, puree using hand blender, to desired consistency.

Potato, Chicken & Banana Patties. (Freeze well)

(This is an excellent recipe for babies who cannot have eggs, as the banana binds the mixture together beautifully and adds a lovely sweetness to the patties)

Corn Oil
1 lb/450g floury potatoes (baking potatoes), diced
8 oz/225g minced chicken
1 large banana
2 tbsp rice flour
1 tsp lemon juice (optional)
1 onion, finely chopped

  1. Place diced potatoes in saucepan of water and bring to boil. Boil for 10 mins until cooked through and soft. Drain and mash until smooth. Allow to cool.
  2. Add minced chicken to potato.
  3. Mash banana and add it to potato with the flour, lemon juice, and onion. Stir mixture well.
  4. Divide mixture into equal portions, roll into balls and flatten with hands.
  5. Coat with rice flour both sides.
  6. Heat corn oil in a frying pan over a medium heat, add a few of the potato patties at a time, and cook for 10-15 mins, or until cooked through and golden brown.

Beki - thanks for those!!

The potato, chicken & banana patties sound really good!!

Does it have to be rice flour do you know?

Coincidentally I have spuds and bananas that need using up

And i guess the salmon dish can be used for anything...chicken, cod etc.

Cheers

Hiya.

No it doesn't have to be rice flour, it could be cornflour or tapioca flour - whatever you've got really, it's just a coating to help make the patties crispy when you fry them.
Glad the recipes are of some use. I've got loads more - I'll post some more once I've typed them up....
Take care!

Glad to hear she likes it!
Got another recipe for you to try....

Tuna Balls (Freezes well)

(I make these up in large batches, cook them, and freeze them when cold. If you then defrost them the night before needed, they will warm up beautifully in the oven, or can be eaten cold when out & about).

Corn oil
1 large tin tuna in spring water, or brine (if baby can tolerate the salt)
1 egg
3 slices bread (Morrissons do a good range)

  1. Using a hand blender, blend each slice of bread individually into breadcrumbs and set to one side.
  2. Drain tuna and place in bowl. Flake tuna a little to break up chunks.
  3. Add one beaten egg and about ½ breadcrumbs, and mix well.
  4. Shape tuna mixture into small balls using hands & coat in remaining breadcrumbs.
  5. Once oil is hot, shallow fry in frying pan over medium heat, turning regularly until golden brown.
  6. Pat dry on kitchen towel & serve.

Not sure if you've tried egg yet? but this was the thing I used for trying Elliott with eggs, as one egg is spread over about 12 tuna balls so the amount is very little.

Its also a cheap, easy thing to make which actually takes very little time in the kitchen!! You can substitue the tuna for a similar size tin of salmon (once bones & skin removed)if you like.

Love, Beki.
