DD's 1st birthday : what cake can I make her...please help <wail>

My DD's first birthday is on 29th Jan. She is severely intolerant to both dairy & soya and have recently tried her with oat milk which set her off too (gets either vvv constipated or vvv runny poo )

Anyway I need an easy (not the best cook here ) cake recipe which is dairy/soy free.

Don't know what she is like on egg yet and not brave enough to try as just got her ok ish so need to avoid that too for the moment!!

Also only need it to be for DD as going to buy a cake for everyone else, so just a small cake is fine!!

we make ordinary victoria sponge, using Vitalite marg which is DF, but my dc are ok with egg...
there is an eggless version, i will have to hunt for it and come back with a link.

Re rice crispie cakes which would be a good activity to keep DS (3) entertained as he can "help" is it possible to get dairy/soy free chocolate?

Banana cake yum ponders if it freezes...

Victoria sponge may be the way to go. Hopefully even a pants cook (oops nearly typed "cock" ) cannot mess it up...

LOL its alright!! I need to double check everything anyway...am so struggling/pants at this allergy lark.

Luckily have another hosp appt on 12th Feb so hope they can help a bit more!!

"I have a recipe for a lovely boiled choc cake that works out perfectly each time. You can substitute butter for dairy free spread and the egg for egg replacer or pureed banana/apple.

Boiled Chocolate Cake

1 cup water
1 1/4 cup sugar
4 oz butter (or dairy free)
2 tbs cocoa
2 eggs (replacer or puree banana/apple)
1 1/2 cups SR Flour
1/2 tsp baking soda

Place, sugar, water, butter, cocoa and baking soda on low heat until melts - then simmer for a few mins. Let Cool. Mix in beaten eggs and flour. Turn into 7 inch round cake tin (greased or baking paper). Bake in moderate oven for 45 mins approx. Ice when cold.

When my ds was 2 I did this replacing the butter and eggs. I iced it with "butter" icing using dairy free spread and icing sugar. Because the cake is boiled it has a dense texture and does well with substituting most things. hth "

My son's birthday cake has to be gluten/milk and egg free. I substitute using a Delia Smith cake recipe as the basis -
i.e. 5 oz of each of flour (I use Dove Farm but since you are not avoiding gluten you can use ordinary flour), Pure spread (dairy free), and sugar. I then use 1 heaped tablespoon of cornflour plus three tablespoons of water to replace each of the two eggs - and use almost 2 teaspoons of baking powder to encourage a nice rise. For chocolate cake a tablespoon of Green and Black's cocoa powder is enough. It's baked in two tins and we sandwich it together with jam. Never fails.
