Cake recipe with no gluten, dairy or potato (so not potato flour)

Doesn't have to look pretty as it's for my mum and I am going to cover it.
She also can't eat pork, but I figure that isn't going to be an issue

You can get gluten free flour made by Doves farm. It's available in most supermarkets.

There are also dairy free spreads available - pure make one (also available in the supermarket).

If you use those you could use a 'normal' cake recipe.

Alternatively I used this chocolate cupcake recipe as a basis for a birthday cake and it came out great. I seem to think that you can get gluten free baking powder but am not 100%

Nigella's clementine cake. Uses ground almonds instead of flour, and eggs, and clementines. 'tis blardy lovely too.

yes, you can get gluten free baking powder from any supermarket. I subsitute flour with polenta flour and use maybe soya milk for most sponge type cakes

Ooh thanks, was not sure about soya flour because of the baking powder issue, but having read the pack in my cupboard I already have a gluten free one

I can use eggs, thank god, as have never seen xantham gum!
I thought gelatine was from beef? Not a problem though as am using icing to cover so shouldn't have geltaine anyway, I hope.

Not quite what you want, but I got this fab and super easy muffin recipe from another MNetter and wanted to share:

Almond muffins ? GF/WF/DF

Preheat oven to 375F. I think that's 175 degrees C or thereabouts, depends on how hot your oven is. The original recipe I was given said 350F but I found 375F worked better for me, perhaps my oven is slow.

Beat together:
2 1/2 cups ground almonds (doesn't matter if they have the skin on or not - I've ground my own whole almonds or have bought the blanched ground ones)
3 eggs
1/2 cup honey
1/4 cup butter or applesauce
1/4 tsp baking soda
1/8 tsp salt
large dash vanilla essence
huge dash cinnamon

Pour in muffin tin (makes about 12), bake for 20-22 min.
They are especially yummy if you sprinkle the tops with cinnamon and brown sugar (and tiny chopped walnut pieces) before baking.

Kerry, that's crap of them, and interesting as well as I never knew. Mum downs fruit pastilles so I better warn her!
and those muffins are great, am saving all these recipes up for future ref so muffins are good too!
