You could try this one but add in milk instead of water.

My son used to be allergic to milk and I found the old Marguerite Patten cookbooks written during rationing really helpful. Not sure they'd work for egg free things, but if you're ever in a used book shop you might take a look.

150g plain flour
2 tsp baking powder
half tsp salt
1 tsp ground cinnamon (optional)
2 tbsp any mild tasting vegetable oil plus oil for the pan
5 tbsp water
300ml plain rice or soy milk
1 tsp vanilla extract
2 tbsp pure maple syrup

from the vegan with a vengeance cookbook

they are DELICIOUS! honestly. i don't think i'll ever go back to normal pancakes.
and of course you can use ordinary milk if you prefer

try
225g s.r flour and 425 ml fizzy water. usual cooking in frying pan with a drop of v. hot oil. this works v. well and can be topped sweet or savoury. (sugar and lemon is always a winner here!).we have multiple food allergies and have tried lots of things over the yrs (oldest ds is 13) and this works best. can be made v. thin like a crepe once you are practised! forget the pkts they are soooo stodgy and thick.
hope you find these edible!

We use this quite often and DS loves them. Its dairy and egg free and wheat free.
1 and 1/2 cups rolled oats, pinch salt, 1 and 1/2 teaspoons baking powder, 1 cup water (add more if required) 1 tablespoon flavourless oil eg sunflower or grapeseed, 1 tablespoon honey.
Grind oats to a smooth flour in food processor or blender. Add remaining ingredients and blend well. Allow to sit 10 minutes to thicken. Blend again. Cook as for pancakes in a very hot pan and turn when bubbles form. Makes 8-10 pancakes.
Great with maple syrup.
DS tried to make them himself when he was about 6 when I refused to make them one night.. I had made them for 6 nights in a row at this point. I'll never forget hearing the whrrr of the food processor...They are fairly thick pancakes, but delicious!
