Ideas for gluten-free bread or cake

A group of us are going away for New Year, taking it in turns with cooking. One of us cannot have gluten - she usually just avoids what she can't eat but I have a feeling that there's going to be a lot of bread and soup / cheese / cold meat going on so it would be good to have something nice to offer her for a change!

Does anyone have any good recipes or suggestions for bread or cake I could offer her? If there are any good websites that would be great too.

Bread is a bit difficult, mainly because most of it is fairly horrible. If you wanted to you can buy some reasonable bake at home type breads. Tesco do a ciabatta and Waitrose sell Livwell bake at home baguettes.

Cakes are easy to make. Just use a normal sponge cake recipe and use Doves Farm gluten free flour. If you use the standard plain flour add some baking powder - and I also sometimes add xanthan gum, but it's not essential. Doves Farm now have a self raising flour which I have bought in Tesco, but not seen elsewhere. Rice flour can also be used in cake recipes.

nigella's clementine cake is gluten free, and absolutely delicious.

for shop bought, sainsbury's free from choc brownies are quite nice (do taste shop bought, but are acceptable iyswim)

village bakery stuuf (think they do some choc orange brownies) are also quite nice.

as a change, I have seen corn tortillas, which you could use as wraps instead of sandwiches? but do check ingredients - I have seen them but not bought them but cannot remember why (sorry) but my dds are multiple intolerant so could have been for a different reason.

discovery do corn tortillas that are gluten free - my dad is coeliac and he's had these.

almond cakes are delicious and are very moist and tasty, and gluten free if made just with ground almonds. don't have a recipe to hand but definitely worth googling a recipe.

depending how concerned she is or how bad her reaction to gluten is, she may eat oats. i think they contain gluten but it's different to wheat - my dad has porridge even though he won't eat other gluten containing products. so your friend may happily eat flapjacks for example.

if you live near a big sainsburys then the mrs crimble's range has various free from type cakes etc. the chocolate coated macaroons are lush, whether you eat gluten or not, and are gluten free.

also make sure you have some gluten free flour for general cooking - e.g. if you are coating food for cooking, or using flour in gravy then it will need to be gluten free. no difference in terms of taste, and makes her life much happier!

Oh, yes, good tip about the flour in cooking. Was going to do a casserole so will get some gluten free flour for thickening...

it's fab - does take a bit of time (boiling the clementines) but well worth it.

DO NOT under ANY circumstances be tempted to eat it on the day you cook it - it is soooooo much nicer the day after!

Neither bread nor cake, but there are lots of nice gluten-free sausages out there, particularly the Black Farmer and some of the Sainsburys Too Good To Be True ones. A lots of soups have wheat in as well, unless you're making it of course!

Silverfrog, that cake sounds delish!!!
I am usually reluctant to bake, but I will give this one a go. This is the sort of thing I would normally go for, simple and healthy ingredients (I might try honey instead of some of the sugar, hope I won't spoil it).
I want to make it NOW(but can't until I get ingredients)!
