Ruubbish at cooking! How can I make breadcrumbs stick on if I cannot use egg?

I did see a thread of this that said to use mayo but I cannot use that either as it has egg in it. DD is egg intol and I want to try the AK cornflake fishstick recipe.

Can anyone help? I am rubbish at this type of thing! Many thanks

What's in it? I only ask coz I was doing something the other day with chicken and grated apple and got them to stick in ball shapes by using lots of flour. I covered my hands and really moulded them with th stuff. It worked for the most part. 5 balls out of 7

You can buy egg free mayonnaise.

How about melted butter or possibly milk?

Oil will work fine - just toss in a bag with a tablespoon of veg oil and then toss in the cornflakes.

LittleBoyBlue - it is cornflake chicken. You rush the cornflakes up and use them like breadcrumbs then fry the chicken strips for a few mins then bake till cooked. Apparently...

Right, off to the kitchen the destroy another batch of hideously-expensive-don't-know-how-much-longer-I-can-keep-buying-organic-chicken!

Buttermilk is good - if you leave chicken marinating overnight it makes it lovely and tender as well.

Prufrock - now I show my true ignorance - how/where do I buy/make buttermilk?

I have to stand up and admit I am a truly hopeless mother who can cook up a storm in the professional workplace but embarase my DDs every Christmas when I insist on trying the 'bake' for the school fete. Even the DDs would rather I just went to M&S. I do try..... so hard!

Just thought as well, I am going to be trying DD3 on chicken/fish sticks for the first time on the week her big molars are coming through and she is constipated.

I am truly hopeless! Off to see if I can freeze them....

Littleboyblue - obviously I meant to say 'crush' the cornflakes not 'rush' the cornflakes (see BBF yelling at cornflakes to hury up) and there is no frying involved, my mistake, must have been another recipe. This one you just bake in a greased recepticle. Its an Annabel Karmel so its got to work!

No, not cornflake chicken, it's just chicken in tiny pieces, mixed with grated apple and fried in little balls. Might try oils next time or coat them in oil

Put chicken in seasoned (ie salt and pepper)flour to coat lightly, then dip in milk (this provides a sticky coating which the breadcrumbs will hold on to) then dip/press in breadcrumbs. Put each on on a seperate plate and move from one to the next to the next, then onto a clean plate. Pop into fridge for 30 mins then fry.

Buttermilk, buy from supermarket, usually somewhere near yoghurt/cream in a cream like container.
Nigella swears by chicken strips marinaded in buttermilk, then dipped into crushed ritz crackers and shallow fried in oil. I have slightly amended the recipe to use Nairns Organic herby oatcakes instead (far less salt) and IMVHO they are superb, and v. easy

For a v. easy and impressive bake I would heartily recommend Nigella's gingerbread recipe - let me know if you wnat me to post it

Prufrock, please post the Nigella gingerbread, DD1 and DD2 would love it. I will try to find some buttermilk in the meantime, sounds like a good plan. I am a real sucker for ritz crackers I must say but Nairns are really good too. Are these Nigella recipes available on line do you know?

ComeOVenner, that sounds really good, might also try with prawns for 'grown-up' nibbles, just increase the spice a little.

Littleboyblue, I did the apple and chicken balls for DD1 (12 yrs) for her lunch the other day and they went down a storm. Its amazing what 'healthy' goodies you can secretly squeeze into a lunch box if you try.
