Adverse reactions to more & more food

I was diagnosed with coeliac disease in May last year so went GF
Then around Nov went diary free as I noticed I was having a reaction to dairy (gurgly stomach & toxic wind)
Then in the last couple of weeks I've been having the same reaction to eggs and houmous (presumably the sesame)
I love eggs, mayo & houmous so I'll be gutted if I have to stop eating them. And I'm not sure vegan mayo will be quite the same!
But is this normal to develop intolerance/allergy later in life (I'm mid 40's).

From what I recall of discussions with various NHS dieticians over the years: if you cut out one food due to perceived intolerance, your body may look around for the next thing to take exception to, and so you become intolerant to something else...and on it goes.

There is also something called masked intolerance which complicates matters. Hopefully, someone better informed than me will come on to advise you.

Bottom line IMHO:
Of course you have to cut out all gluten if you are diagnosed coeliac but beyond that it's probably best not to cut more stuff out until you've spoken to your dietician.

Sadly this is exactly what happened to me. I stopped gluten, then dairy and from there it has just spiralled. My diet is so limited now and my general health is very poor. I have also developed histamine intolerance and rosacea which complicates things further. No advice right now other than to reduce the amount of the foods you react to rather than cutting them out completely. For example I have found I can tolerate a few blueberries or a couple of nuts. I will come back if I have success with anything- I am currently trialling Seed DS01 probiotic in the hope it will improve my digestion and allow me to slowly expand my diet. Good luck.
