Is this a milk or wheat Intolerance and not actually Gastritis?

I've been taking PPI for weeks on end now for what the Dr said is Gastritis, where my only symptom is soreness and burning, always in the same place, the whole area above my belly button all the way up to about 13cm below both breasts. The PPI meds have made little to no change even with 80mg of Esomeprazole daily. I don't have any reflux or acid symptoms in my upper chest or throat. I do have constipation though.

I can go days with no symptoms, but I think I'm starting to notice a pattern. I think it happens several hours after I've consumed milk which is usually in the form of a Cappuccino, as a treat now and again. I drink coffee without milk daily. I don't eat butter as DH is hugely lactose intolerant, so my diet is mainly lactose free too. I have none of the lactose issues he has like rushing to the loo and cramps after consuming dairy. My pain appears hours afterwards. Could it be the Milk Protein?

I'm in Southern Europe, we cook from scratch daily and only use olive oil in our cooking which is mainly grilled meat, fish and steamed veg, or homemade veg soup and we use lentils often too. No spicy food, a glass of wine twice a week, no pizza, pasta once a week with homemade Ragù or Pesto with a tiny bit of Parmesan that is over 30 months mature, so it is naturally lactose free. Gorgonzola is also naturally lactose free btw!

I don't have a sweet tooth, so never really touch cakes and biscuits but yesterday I ate a teaspoon sized amount of a Gourmet Brownie made with cream and butter, which left my tongue afterwards with sort of creamy taste on it all day as if I'd drank a carton of cream! I also had a very small slice of sourdough yesterday evening and it immediately made my tongue tingle! So it is bread or milk or both?!

Now I'm sitting here with intense burning as I type, so my question is this - is severe infrequent intestinal burning a symptom of an intolerance?

Bumping as it's happened again. Lower intestinal cramps and above belly button burning are making me sweat, and they last days. I had milk products three times since Thursday. Had IgA (tTG-IgA) test for Celiac but all seems ok. I've also found out I have 'pockets' in my intestines.
