Gluten free bread without starch?

I've been diagnosed with Coeliac disease for about 4 years now. On a GF diet and all is fine, except I can't handle any gluten free bread. I don't eat much of it but occasionally I like a bit of Genius bloomer to have toast and/or eat with soup.

If I eat a tiny bit (1-2 slices) I'm not too bad but if I eat any more I end up with really bad gas which smells horrendous (sorry if TMI!!), plus I bloat up badly.

The only thing I can think of is that GF bread is made with starches most of the time instead of actual flour- could this be it? I'm fine with GF pasta etc and home made bread with GF flour is also fine. Which is what's making me think the starches are just fermenting in my tummy and causing horrible side effects.

Does anyone else have this and has anyone found GF bread made with actual flour like rice or maize?

It might be the psyllium or bamboo fibre.

All flours contain some starch to greater or lesser degrees, you mention corn and rice flour, both these are high starch.

The Gluten Free Bakery use some interesting flour blends and might be worth a try, their boss bagels are amazing:

Xantham gum which is added to the flour is know To cause gas and bloating in some have a look online

Is it the yeast? Can you tolerate GF flat bread/pitta?

Good ideas, I will try sticking to flatbreads and see if I have the same problem.

Could well be the psyllium or zantham gum- neither are in the GF pasta I eat.

Obviously need to do some experimenting!

When I refer to starch, I know flours contain starch, but I mean ingredients lists that specifically refer to 'starch' as opposed to 'flour'. I wasn't sure if there was a substantial difference.

Try rice cakes for a while....
But also worth seeing if any other foods could be causing the problem. I spent ages trialling GF breads before discovering that I have IBS and the large amounts of fruit and veg I was eating was absolutely slaying my gut!
