Home made muffins for milk ladder

Has anyone made these?

I am usually pretty good at baking but these are a bit of a disaster and I am just wondering general consensus on whether they're ok to give to DS2. I folowed the recipe but the only thing I changed was I didn't have any bicarb soda (recipe called for 1.5tsp baking powder and 0.5tsp of bicarb - I used 2 tsp of baking powder). Anyway the mixture seemed really runny and I baked them for 25 mins (recipe said 20) and they still came out really gooey inside. Not wet like uncooked batter, just there is no crumb to them and they have sunk completely already.

Oh and I just remembered I used gluten free flour which has something to do with it, but most importantly, if they have been baked for 25 mins then that is long enough for the 3rd step milk ladder? Am really nervous! He probably wont eat it - they look rubbish!

I've given up with those muffins. We're also gluten free so may be that's it but had the same problem with a runny, part baked mixture. DS refused to eat them each time I've made them. Be interested to find out if there a step three alternative.

I made them for DS. Mine were egg free and gluten, soy & corn free though (so not your usual GF flour). Came out ok, though the mix was definitely runnier... mine was happily scoffed in growing chunks until we'd eaten half a muffin and it all went pear shaped. I tried the last of them and they weren't wonderful, but about what DS is used to... i can try and rustle up my recipe if it helps?

It would help, yes, if you can find it! Thank you so much. He's doing fine with them but clearly thinks they're gross. He's eaten half a muffin for 2 days and today I tried to get him to eat a whole one but he's just not interested. They're a bit stale now I guess too. Tbh I Am a bit fed up the the whole ladder is so sweet. I mean, if he tolerates these muffins or the pancakes, we might have to wait a while before the next stage as we have a holiday planned, so ideally he should be eating some milk product every day to make sure he stays tolerant, but I don't want him thinking it's ok to eat cake every day! What other sort of things do you think have the same level of milk content?

calliou did you go straight into pancakes then? That's another option

mayfair actually don't worry about that recipe. Just seen that you didn't use normal Gf flour, I think that's a little too complicated for me. I will give these another go and see if i can be a bit more accurate with measurements etc. see if that makes a difference.

I've not tried this specific recipe but I always use a little more flour than it suggests if I am switching regular flour for GF, the GF always seems to make runnier mixture for some reason.
