Any good recipes that are gluten/dairy/soya/bean free?

I'm coeliac and am bf dairy/soya/bean (chickpea, pea etc) intolerant DD. She gets explosive diarrhea and bad eczema if she eats any, and a milder version if I do, so I do need to avoid. The verdict is still out on carrots and tomatoes too.

I can do main meals no problem, but nothing tasty. Am losing weight though at the rate of 2lb per week, despite eating whatever I want within the limits above. That's great atm, but will be a big problem in a few weeks when I hit 9 stone. If I go any lower than that, I get really tired and ill!

So - any good sweet/savoury recipe ideas anyone?

How are you and your dd with almonds or macadamias? because I make lovely brownies with those and molasses or maple syrup.

Almonds are Ok through me, not tried her eating them yet. Your brownies sound yummy!

The recipe? for gluten free brownies

Ingredients- I and half cup ground almonds
1 cup molasses or half a cup of maple syrup| half cup molasses
3\4 cup of light olive oil or whatever oil you like
half cup almond milk\or whatever milk you like
half a cup of almond butter
chopped almonds or macadamias if you like or what nuts you like
Spices you like, ground or chopped ginger
Gluten free baking powder 1tablsp.
Cocoa 1tabsp. or 200gram. dark choc.

Method; Take a large heavy saucepan ,this is a one pot recipe, Put it on a very low heat, gently heat the spices and chopped nuts, add the oil, molasses, almond butter and choc. or cocoa (you could make this without the choc. if you wanted). Let it melt gently and then cool down (but not get cold). Then add the ground almonds and baking powder and mix, if it's too sticky add the milk to make a 'dropping' consistency and then put it in a lined or greased tart tin. Cook at 180C for 15 to 20 mins. check it but it's nice with a squidgy centre! let it get cold in the tin. then enjoy!

Bronya, i make yummy DF risotto by using oatly cream and no cheese. You can add anything you like to it, really... just find a recipe you like the look of and don't add the cheese! (use only olive oil instead of butter).

Stir fries are great for being able to make different flavours and you can add what ingredients you can eat in the sauces.

There are various GF pastas around; if you can't use tomato based sauces, you can still use pesto based ones (make your own, or check the ingredients).

Fish chowder made with oatly is a favourite in our house. (sans corn :-( )

Make your own flapjacks with DF spread.

I make egg/soy/corn/wheat/gluten/dairy free cakes a lot. The banana banana bread (yes, double banana) on allrecipes.com is really yummy (use DF spread and a GF flour).

A lot of paleo type recipes will work for you.

If i remember rightly, there is something called 'nomato' ... a tomato subst. we've never used it, but it will open up your diet if you're not sure yet about tomatoes.... there's a lot of foods like paella, shepherd's pie, spag bolognese etc that you can make with a substitute.
