HELP - quick, I need a non-dairy, non-soy cake recipe!

I just burnt my DS's birthday cake trying to 'adjust' a regular recipe. Bugger. Anyone got a good non-dairy, non-soy recipe for me?

My local Tesco is open until 10.00, so I have a wee bit of time to go out if I need supplies…

HELP!!!

I should add…yes, there are plenty of recipes online, but after binning this burnt mess I'd really like something tried and tested!

I would just follow a standard Victoria sponge recipe, basically 3 eggs, and 6oz each of flour and sugar. Instead of butter use 6 oz of dairy free spread, will be near the butter in tesco

I have baked the above recipe myself, it also works with gluten free flour.

Hope it goes well, I have never had a real disaster with a Victoria sponge. Occasionally it rises a bit unevenly, but once you put the icing on no one knows (and it will taste gorgeous) :)

Yep, thats what I'd do too.
Put a little bit more flour in (or dairy free cocoa powder if you want chocolate), as I find the dairy free marge a little wet.

Btw, any ideas on what I should use for the icing? (Basically I have no idea what to do other than add a layer of jam!!!)

Icing, well you can make a really simple icing glaze just by mixing sieved icing sugar with a bit of water, you can make that as thick or as thin as you like by adding more or less water. Add a spoonful of (dairy free) cocoa powder such as bournville if you want chocolate icing, or add things like lemon juice OR orange juice for fruity icing (add it instead of the water) if he likes fruity flavours.

You can make buttercream using trex (vegetable fat) and icing sugar, and a lot of mixing! Add colour and flavourings such as vanilla though. Apparently you can even buy chocolate essence. The

I don't know if it contains soy ingredients (it probably does) but betty crickets ready made vanilla/choc fudge frosting pots are dairy free and I think they're nice. Do check the label though, I wouldn't want to cause a reaction.

I would do icing sugar and water as a pp suggests. Sprinkle some suitable sweets on the top? (Not sure how old your ds is)

Ahhhh, I just twigged that the creamy stuff in-between the Victoria sponge layers is just plain icing (I thought it was some sort of special cream-thingy...?)

The plain icing in a Victoria sponge is usually either cream, or vanilla buttercream. You can't use the icing sugar and water (glacé icing) for filling a cake, it'll run out, it's really only best for topping a cake.

Good luck I'm sure he'll love it anyway! Cover it in sprinkles and sweeties, can't go wrong.

What did you do?
I'd put raspberry jam in the middle, and the icingsugar/water mix, or just dust icingsugar on the top, with some raspberries on the top.

The cake turned out beautifully - thank you! We did raspberry jam in-between the layers, with fresh raspberries on top and a dusting of sugar. It looked really good and it tasted even better probably because DP took over the whole project for me!

James - Thanks for clarifying the icing on a Victoria sponge (I thought it was awfully creamy looking to be a simple glacé icing.)

I'm so pleased that I posted my panicked recipe request last night! Smile
And I just might keep this user name for awhile...

Another df/sf option for the icing is icing sugar and lemon juice. It adds flavour to the cake as well.
