Dairy and Gluten Free Fairy Cakes

I'm making a cake for DD's birthday party at the weekend. Two friends are dairy and gluten intolerant respectively.

I want to make some fairy cakes for them so they aren't too left out with taking cake home.

I have gluten free flour and dairy free spread. Do I need to adapt the method at all or simply replace the relevant ingredients in my standard receipe?

My daughter is allergic to bows milk and I literally replace dairy products for non dairy. So if the recipe requires milk I will use soya milk, if it requires butter I use Vitalite spread. The cake has always been fine there are some nice recipes online if you type in dairy and gluten free cakes. Xx

I'm gluten free and bake loads. You may just need a little extra liquid as g/f flour tends to absorb more.
You can use dairy free milk or apple juice.
So for simple fairy cakes
115g butter diary free spread
115g sugar
115 g/f flour
2 eggs
Good splash of liquid or even reduce flour a little say to 100g

Making mini lemon cakes would be nice just add juice and zest of half a lemon then use rest for drizzle icing.

If just doing basic cakes add a little vanilla extract. Also if possible bake on the day or last thing night before as g/f cakes don't always keep as well as normal.

On the dairy intolerance. Most coeliacs are not really dairy (i.e milk protein) intolerant but lactose (i.e milk sugar) intolerant so you can use lactofree milk. It is normal milk with lactose removed. Check with their parents. It may be they say 'dairy free' just so people understand but really they are lactose free.

I am severely gluten intolerant and lactose intolerant and bake all my own cakes and bread. I use Pure margarine as well which is dairy free.

Both Lactofree and Pure are brands easily obtained in many supermarkets. Soya milk tastes vile and upsets my stomach.

Yeh would be best to ask parents about the dairy. My daughter is actually allergic and not intolerant but as more beta said that a not the case for everyone

Thank you so much for your help. It's just fairy cakes so I wouldn't use milk even in a standard recipe. I think I will put a little apple juice in though to take account of the flour absorbing more liquid.

Luckily the party place caters for gluten and dairy free diets so I only have to make cakes.
