Coeliac foods in Canada?

We're holidaying in Canada next year (yay!) taking a fly-drive from Calgary through to Vancouver. Can't wait - bu tI'm having to plan early to ensure DS2, who is coeliac and will be 11 then, will be catered for. Since he's been diagnosed we've normally gone for self catering holidays in the UK or France and eating out hasn't been too much of a problem - ham, egg & chips or galettes in Brittany have gone down very well. This time we'll be staying and breakfasting in some rather nice hotels but probably snacking en-route, so my question is: are gluten free products like bread etc freely available in most Canadian supermarkets? Are they likely to have 'straightforward' gluten free options on the hotel menus? (All the menus I have seen look pretty haute cuisine but DS2 is a typical boy who's not too keen on veggies or 'fancy food')

It's 15 years since we last visited Canada and I can remember everything but the food, and we didn't have to worry about gluten then, so any advice/tips gratefully received!

My mum is coeliac and has had really successful holidays in Vancouver, labelling is good and there does tend to be some choice on menus.
