Substitute for nuts in GF, DF brownies?

SixImpossible · 02/07/2014 21:22

If I make my GF DF brownies with nuts, ds cannot have them in his packed lunch at school. But the brownies really need the nuts for the texture. Any ideas what I could use instead?

Dairy free chocolate chips?

guineapig1 · 02/07/2014 22:31

Pumpkin seeds

ShineSmile · 03/07/2014 00:17

Are you able to share your recipe please? Smile

NotTheKitchenAgainPlease · 03/07/2014 00:17

Sunflower seeds work well for us. And pumpkin seeds too

SixImpossible · 03/07/2014 00:55

Pumpkin seeds could work. I might try choc chips, too, though TBH the brownies already pack such a chocolatey punch that I've been considering reducing the amount of chocolate in them. But they do need the crunchy texture added.

I try to remember to post my recipe tomorrow.

GF DF Brownies

3 eggs
200g caster sugar
Pinch of salt
~75g (weight) sunflower oil
100g dark choc, melted
~25ml non-dairy milk (2 dessert spoons)

Mix well together.

50g gram flour
4tbsp cocoa powder

Sift together, add to mixture, beat in well.

Add 50g of chopped and/or toasted nuts of choice.

Mix well.

Bake in lined/greased tin at 180C for 25mins.

9" square tin gives a good thickness to the brownie.

I'm thinking of reducing either cocoa or chocolate, as the choc flavour is seriously intense. Also want to try replacing some or all of the flour with other flours, or adding baking powder to make it lighter. But TBH it's such a quick, easy, reliable recipe that I have never got around to tweaking it further!

Six, there are no nuts in there?

I think reducing the cocoa might make the taste of the gram flour more apparent, which isn't great. How about placing plain chocolate instead of dark? Waitrose do a gf, DF and sf one.

SixImpossible · 03/07/2014 12:40

"Add 50g of chopped and/or toasted nuts of choice" Wink

Re the taste of the gram flour: yes, that's why I'm wondering about replacing some of the flour. Doves Farm blends seem to work beautifully for everything, but (a) they don't give the chewiness that gram flour gives and (b) they're expensive!

I add dried cherries

ShineSmile · 03/07/2014 12:57

Six, sorry! I think that could easily be replaced, as its not adding to the texture?

My DD and I get bloaty with gram/chickpea flour. I haven't had much luck with doves farm. I made cake with it twice and bread, and it just wasn't that good. Maybe it's because I'm not using egg either, I don't know.

Waltonswatcher · 04/07/2014 20:19

Pine nuts aren't nuts , those would be ok .
Also cocoa nibs - really tasty and good for you .

Waltonswatcher · 04/07/2014 20:22

Hi shine!
The cake recipe in the back of the doves gf self raising packet is really good . Substitute the sunflower oil with olive oil as its a far nicer . They freeze well too as little cakes .

addictedtosugar · 04/07/2014 20:29

I know you said they are already chocolatly enough, but what about:
crushed oreos
malteesers
crushed meringue (not tried this)
white chocolate chips?

I'm on a sugar mission. Otherwise what is the point of brownies, but for a packed lunch, maybe not!

I've seen a recipe for banana slices in brownies..... So some fruit??

SixImpossible · 04/07/2014 20:54

addicted: dairy free and gluten free!

But meringue is a good idea.

I've heard of but never seen cocoa nibs. Health food shop?

Oreos and malteasers contain gluten addicted

Personally I don't like nuts and fruit in brownies. They are just fine without them, so I would just leave them out.

MollyBdenum · 04/07/2014 21:00

I like white chocolate chunks best. Plamil do a dairy free one which is available in healthfood shops. Also good are candid orange peel, dried cherries, sweet dried apricot kernels, cocoa nibs or banana chips

CMOTDibbler · 04/07/2014 21:01

I've bought cocoa nibs from a health food shop, but am really underwhelmed by them

Waltonswatcher · 04/07/2014 21:44

The chopped cocoa nibs I mean . The flavour and texture are nutty .
Ocado stock the whole cocoa but not the ground / chopped .
They are great in smoothies too .
I went for 2 years with no cocoa/ chocolate so to me those guys are heaven ( not as good as a packet of chilled raspberry booja booja though -oh yum .)

addictedtosugar · 05/07/2014 07:40

Opps, sorry. Blush
