dairy, gluten, egg, soya, wheat and nut free!

it really does look yummy - I never thought of making a rice pudding with coconut milk before. It's great to have pudding recipes because it's often the nice stuff that allergic kids miss out on!!

What a great recipe! My dd (who has Galactosaemia)will love this (hopefully!)She is only 24 wks at the mo so will experiment on my husband first!

it does look lovely doesn't it?!

have just given it to my friend - her son (nearly 5) is still egg, gluten and dairy allergic so she has a hard time finding him interesting puds to rival the puddings her other children get! What's lovely about the recipe is that any child would probably eat it.

Except possibly DD1, who turns up her nose at cardamom.

In fact I made a (heavily dairy) ice cream which was quite exquisitely cardamom-ish recently - think a cross between fabulous ice and kulfi - and they all turned up their noses. DP said 'errrrr, babe, I did tell you I only like vanilla and chocolate ice cream' and the Inferiorettes retched theatrically, although DD1 conceded kindly that it was OK with absolutely lashes of chocolate sauce.

I'd add raisins, as well, myself.

I'm not a big raison fan but I'd consider adding dried chopped apricots or prunes and possibly some cashew nuts.

If I was feeling particularly radical (and I will be when I return from my Green Festival next week ) I would try making it with hemp milk.

ooh more ice cream for you MI (what a cunning plan!)

now that I have you on here, do you use natural yoghurt in your curry making? I do (not sure if this is right or not) but I haven't found one that I think makes the perfect sauce yet. Have you got any tips?

I don't, myself. Tend to stick with tomatoes. Or sometimes coconut milk.

aaah coconut milk - haven't tried a curry (for the kids) with that yet - think I will have to experiment

Having said that, I've not cooked a curry for a bit. Must Do Better.
