Dairy free, Gluten free ideas please

Hi, I was put onto this site by another poster and have borrowed her computer to ask a question please.

I have two sons aged 6 and 3 and a daughter aged 19mths.

My sons have been diagnosed with leaky guts and we need to take them off wheat, gluten and dairy completely.

I am fine with main meals as I can just do meat and veges but I am a bit stuck on snacks and lunchbox ideas.

Doctor thought it was worth taking Libby off these things too so will need things suitable for her as well,

I thought of
Vege sticks and hummus
Rice crackers and spread
Fruit
Cold meats
Egg

Have managed to make a gluten and dairy free bread which they seem to accept but dont know if it will last in a lunch box as well as normal bread.

Any ideas and recipes would be very helpful.

Sushi
Gluten free, dairy free cakes - much nicer than the bread and when you take out 1.5 foodgroups you don't need to worry too much about sugar etc.
Homemade pikelets or waffles made with permitted ingredients.
Rice salad
Rice pudding made with soy milk
Raisin

Having a "moist" starchy ingredient to my lunchbox helps me feel full. All the rice crakers in the world are not as good as a couple of pieces of sushi.

Sushi is a good idea, both boys would eat that and Libby would eat the rice pudding,

Any good cookbooks/baking books or tried and tested recipes for cakes, pikelets etc that you know of?

Thank you, you obviously have had some trouble with gluten too.

Have you got Marilyn le breton's books? Full of recipes. You can get them from Amazon or Jessica Kingsley.

I'm still trying different cakes and pikelets, so I have no recipes.

I am also still trying lots of different recipies out, so have no real suggestions, but have found a book called Allergy-Free cooking for Kids, by Antoinette Savill useful.

I have soup or salad for lunch, plus a yoghurt and crisps. Most supermarkets do good gluten-free cakes.

I think you can get gluten free pasta that is good for salads etc.

can you do eggs?
If so add an agg and some xanthan gum to pastry to help it along. It is still v tricky to roll and move though.
The bread is OKish if eaten fresh. It dries out quickly - use moist fillings in sandwiches.
will they eat pasta salad? Rice and millett pasta isnt bad as isnt the quinoa and rice(?) one. The corn one goes quite sticky.
corn crackers are better than rice ones.
Cold rice and veg salad?
