Christmas dessert suggestions please? Egg/Nut/Soy/Dairy free...

Oh... and I don't like christmas cake/mince pies (glace fruit, yuck!). Plus, if it can be quick/easy that would be great - I fly in from Australia early on xmas eve so i'll be jetlagged while cooking. I don't ask for much, do I?

I'm thinking of doing Salmon en Croute (ie salmon in puff pastry) for the main, as DP doesn't eat meat (thank you thank you thank you to the unexpected dairy free finds topic!), so probably don't want to do pastry again for dessert...

Would love any suggestions. TIA :-)

I'm doing a trifle, sponge fingers are free from, and I'm using soyatoo coconut whipping cream and birds custard made with Kara and Hartleys jelly and tinned fruit. it's going to be too late for you to get any soyatoo, but there is a recipe for mock cream on our support group and website www.facebook.com/groups/Allergy.diet/

Ooo.. thanks JoleneB. I've only just learned about the custard being dairy free (and I'd forgotten)... i seem to think i managed to get oat cream somewhere recently .... trifle could be the answer.

I have tried making cakes with pure/oatmilk/egg replacer, but they seem to come out more like brownies (but not so tasty) so i was a bit worried about trying a pudding ...

I thought most sponge fingers contained egg? Tesco's ones definitely do. Are there egg free ones somewhere?

JoleneB · 19/12/2012 11:43

yes you can get oatly cream in Tesco Smile. I don't know if it would whip though (I've never tried)

don't know if this will work (I'm doing this from my phone) but this link should let you download the mock cream recipe pdf, it's really easy to make Wink cowsmilkproteinallergysupport.webs.com/recipe%20pdf%203/Mock%20cream.pdf

oh damn, they do, try this recipe, you can use normal self raising flour rather than doves gluten free flour, its a tried and tested recipe so it should work out ok, then cut them in to fingers and leave them out to dry or put them in a very low oven to dry out Smile cowsmilkproteinallergysupport.webs.com/recipe%20pdf%203/Free%20From%20Cake%20POPs.pdf

How about this? If you use stork BLOCK margerine - which is dairy free it should be OK. You can then ice it if you like too ( icing sugar and water).

MayfairMummy · 20/12/2012 03:59

Ilisten2theradio, even before this whole allergy shenanigans, I've been looking for a great ginger cake recipe... you may be my favourite person this christmas. I hope Santa is very good to you!

JoleneB thanks for your help ... I've joined the CMPA facebook too :-)

Fruit in jelly?

ChantandbeHappy · 20/12/2012 04:58

Have you ever made this type of vegan chocolate cake? If not, it sounds weird but it really is good. It's also really easy to make.

You could make one in a square or rectangular tin, cut it up and layer in a log shape, slather in (dairy free) butter icing and you've got yourself a Yule log.

Your very welcome, make yourself known to me on facebook, if you don't want to post drop me a pm, I can't tell who's who from mumsnet because of the nicknamesConfused

Bearandcub, fruit in jelly is my dd's favorite desert, it adds texture and flavor, I make a pint of jelly any flavour and add tinned fruit, or the pots of fruit, but you could always poach your own (I just try to cut corners where I can as everything else is done from scratch!) put a little fruit in the bottom of a pot, I use the pre made jelly pots so the portion size is perfect, and pour the jelly mix over then set in the fridge, as a special treat I put her mock cream on top, she loves it!
