used this recipe, Betty crocker vanilla icing, some pink food colouring and a Wilton 2D icing nozzle to make m.flickr.com/#/photos/13259622@N02/7767081524/

Thank you!!!!Everybody did go ooooh when I brought it out, so it was worth the effort. The heat made it a bit harder to ice than it should have been, I kept having to put everything in the fridge every 10 mins as the icing was starting to slide down the cake.

I wanted to post it as you get so many posters asking for dairy and egg free recipes that work and I wanted to show that dairy and egg free cakes can be just as fabulous as normal cakes.

The roses looked ok from a distance, but weren't particularly perfect close up. There are a couple of YouTube video tutorials that show how to do it perfectly.

Wow Trixy, that's my recipe you used, but it looks far better than the cake I made! I'm not sure if I'm allowed to link here, but I have an egg and dairy free cupcake recipe on my blog, which I think tastes better than the Victoria sandwich cake, if you're interested.

I'm not sure if you are allowed to link as the writer of the blog, is it the easy cupcake one with egg replacer?

The darker pink layer and one other iirc in my cake is made with egg replacer, but I found it difficult to get the middle pink layers to look significantly different so had to make more, but ran out of egg replacer so was searching for a recipe that didn't use it. I felt your recipe was better and didn't sink as much as the one with egg replacer so only linked to yours.

Yes Trixy, the other recipe is the easy cupcake one. I've found that with egg free cooking, you have to be much more careful about opening the oven before the cakes are cooked. I've had several disasters with sinking cakes myself!
I've been really impressed with Orgran No Egg though.

Thanks for the tips. I wonder if opening the oven too early is why I sometimes get inconsistent results even with the same recipes.

I've just looked at the orgran website. It has a recipe for eggless meringue which is going to be my next experiment!!
